Due to the Minamoto deal going out of stock quickly, people wanted to know if there are other alternatives around this price range.

I did my research so you don't have to. As a forewarning, I have not tried this knife but on paper the specs seem good for the price.

At this price, this presents much better value than Global G2 with better cutting performance and food release.

Sold out Gyuto KC958 $65.86
Santoku KC952 $47.88

Are these actual japanese knives or are they like what you get on aliexpress where they just make it sound japanese?

    • This is their official website: https://www.kanetsune.com/

Googling Kitasho will give you their address in Seki, Japan.

      Also featured on Burrfection's store

      • Sweet. Thanks. At this price it might be worth the punt.

        • Ygwypf. Seki stuff are bottom feed tools and appropriately priced so.

          Oh and avoid "burrfection"

  • any suggestion for chef knife or santoku ?

  • I don't know where you're getting the stats on the HRC (and therefore drawing conclusions you're getting better cutting performance) from, because the product page says 57+/-1.0 HRC, not 60.

    • Thanks, I forgot to change it in my copy/paste of the template. Cant change it due to an error, it keeps saying im trying to change the URL.

I was making an assumption due to the steel type, but its hard to say without trying it. At very least the tsuchime finish will help with food release.

I'm wanting a carbon steel nakiri, any suggestions of budget options that are ok? I'm comfortable with a whetstone, keen to try something other than my usual chefs knife

  • Price is sharp indeed.

  • Looks like Gyuto OOS already
