      Nope, the studies that said it was toxic was use 100s-1000s of times more then a normal serving then injecting it and not feeding it to animals. Along the same lines as 1 cup of water is good for you, but if I force you to drink 100 cups you'll die.

        100% this. Poison is in the dosage, and msg in moderation is 100%. It is the exact same chemical compound that is released in many types of natural food.

        Side story, if you look into the history of Asian cooking in western societie", you'll find that these restaurants use a lot of salt to bring out the flavours and textures of Asian cuisine due to limited materials available. The symptoms that many people associated as "msg syndrome" (dizziness, high blood pressure, head ache, thirty) is more likely due to acute salt spike.

      Yes it is, no scientific proof has show this to be toxic but believing it’s toxic is enough to make it so.

        Msg is not exclusive to Asia.

        Almost all Michelin star restaurants and the hat rated restaurants here all use it in some of their dishes.

          I was just referring to the fact that most Asian dishes include some kind of fermented sauce, most of which contain MSG.

            • @Ryballs: MSG is something naturally found in foods. In fact, the person who discovered MSG found it in seaweed, which was also the first source used for mass production.

              @Ryballs: Glutamate and MSG are the same thing. Especially in the body where it’s dissolved.

              There’s a glutamine - glutamate cycle that is readily bidirectional and is important in ammonia balance.

              Not sure what your point is, but MSG is present in your body whether or not you add this to your food.

    Not an expert but from multiple sources I've been reading online over the years, the reason MSG has been getting bad raps began out of racism against the Chinese in the US.

    Sure, consuming it in large amount is probably not the best for you, but then, isn't everything?

    What many who are against MSG may not realise is that the same chemical is also contained in other commonly available cooking ingredient like Parmesan Cheese, etc.

      MSG was 'invented' by Japanese, and the chinese got the blame….

      • Be fair, MSG is often used in takeaways, and I think Chinese takeaways are very common in US and that's where the association is from.
        Not to mention, those takeaways tend to not be the best option for health to begin with.

        MSG is used as a short cut almost, you can either boil a broth for few hours or use MSG to compensate for the flavour, just like using chicken stock for example.

      it improves umami flavour of food. for a start try subbing the salt amount with this and see how you go for savoury dishes. i.e. if you're adding 2 tbsp of salt to a dish, try 1tbsp salt and 1tbsp moto (both contains similar amounts of sodium).

      don't use it where you're throwing away the liquid used for boiling (when boiling water for pasta / potatoes, etc) as it's a waste

        Kind of prefer just to use chilli crisp as love the chilli + msg flavour

        • I use it for meat / protein dishes mostly and it works really well (bolognaise kind of meat based sauces/ bbq dry rubs / meat curries / roasts or braised meat / slow cooks). Roughly 50-50 split between table salt and moto.

          I don’t usually sprinkle these on top of an egg or so as these crystals are big and don’t fully dissolve (personal preference and ymmv)

          For veges just for sautéed mushrooms and other veges normal salt only (not a guide, just a personal preference as i found the taste is overpowering the vegetable normal taste which i prefer to have)
