      • To be clear my comment is in reference to Baccarat knives. A "stone" coated pan is an entirely different conversation and if you've looked after them right for 7 years much respect. Still wouldn't recommended them to someone who's let any knife rust.

        Yet they do so by claiming they "are crafted from high-quality German stainless steel" yet never state what steel is actually used. No mention of HRC or the angle of the edge either.
        These are in the realm of Kiwi Knives that will be replaced prematurely. If you want a bargain buy something that'll last.

        • They are a western pattern, not Japanese, so probably 20 degrees not 15, and softer steel than japanese e.g VG10. so less than 57HRC and that is my guess without google, …. and the web site reveals ….

          Was close, the soft steel makes them easier to sharpen and less likely to chip, they are what I call a start set, and if you outgrow them then you might consider something different, hard to beat a set that size for $104 if you are starting out and learning to sharpen, etc ….             Again no mention of what steel is actually used and a whole lot of marketing speak without actual details. A weak HRC claim with nothing to back it up and the 15-20° edge is extremely vague.

            "Start set" as a concept is a waste of money, buy the right tool to last. The Baccarat handles will fail first even if you can put up with the lesser blade and if cared for.

        x + ro = name. Eg ichi (one) + ro = ichiro = firstborn's name
        jiro = 2nd born
        saburo = 3rd born

        So possibly damashiro = "one who deceives"

    a) sharpen blunt knives, don't replace them
    b) rusty knives 😭

    But yeah if you're spending this much, the vast majority of people will be better off with a 3-knife global set.

      can't you sharpen your own?

      • Because the job he does is so much better than the job I will do - and so my knives will get better wear.

        • What do you mean? What does he do is sharpens it using a stone you can sharpen it using a stone
          I get that he has a machine and you don't have to use your elbow grease
          you end up with a sharp knife

          why would you wait for him instead of doing it as you need at home?

          it's both cheaper and +++++convenience

    • $104 doesn't buy much of 3 knives, even global at 50% off are $60 for a paring and $80 for a chefs knife.

    I unfortunately bought a Baccarat set many years ago. It's still in the kitchen but the block has $7 Victorinox knives in it and one separately bought chefs knife. The only original knife which has probably been used in the last two years would have been the bread knife.

    Hate to say it but these knives aren’t too bad. Have had a set for about 5 years, used most days and put through the dishwasher every other day. Basically doing everything you’re not meant to do. They still hone up relatively sharp and only one of the handles has started to crack. Great entry level set for the price

    • yeah, not meant for dishwasher so if after 5 years 1 handle has an issue that's not bad. Convenience, dishwasher, how much did they cost, I get it
