Saw a few old posts about AMA for maccas and kfc, and thought to bring up a new thread. I do the kitchen stuff at maccas, and at KFC i’m cross certified in all 3 areas.
Will answer questions i can :)

Does one care that you work for the other (like is there any agreement that you can't work at another chain?).
Neither care that i work for a competitor - though in my maccas contract there is a clause that you have to notify them if you start working for a competitor.
Do you prefer one over the other, and working at both
I overall prefer kfc - more pay, and the my colleagues there are more enjoyable to work with.
has anything changed your mind in the food there?
No, not really. It shocked me to see that kfc uses Fresh chicken. I prefer eating at kfc over Maccas these days after seeing how clean the back of Maccas was compared to KFC.
Is there any tips or secrets that most don't know? but if only they did….
Being nice goes along way to the employee - i know myself and a few colleagues will give extra to people who are nice to them (kfc). You can also request for fresh chips.
I had a friend with a maccas card that gave free upgrades for life or something which he let me use once. How do they come up?
Must’ve won a competition or something - i think maccas monopoly had a prize that was free maccas for a year
Thanks for answering all that :D

Back in the 00s, my aunt gave me a Maccas VIP card and could get freebies every time like an apple pie.
What's your go-to technique for drying a mop?
More seriously, what's the craziest interaction you had with a customer?
Ooooo! 👋
Who packs nuggets faster?
My money is on Maccas….
At maccas we use our hands with gloves to pack nuggets - i feel at kfc with tongs you can do faster. Unless ofc someone at maccas orders 24 nuggets and theres a bag down, just need to shake those nuggets into a box :)
I love a tour in KFC kitchen where they go e free meal after the tour.
Never had one from Maccas
Probably for the best, the kitchen at the maccas i work at is dirtier then the 2 kfc kitchen’s i’ve worked in ;)
Can you please bring back Krushers at KFC, specifically the Gaytime Krusher? They were the best and life hasn’t been the same since they discontinued them.
I don't need those back in my life. Takes too long to work them off.
Are the grill slips that come into the kitchen really difficult to read/manage, or is it just my local maccas is staffed by numpties?
I've long since given up on maccas because anything like no onions, or a special menu item (like when they had 50/50 normal and spicy nuggets not long ago) would never be done right.
Are the grill slips that come into the kitchen really difficult to read/manage, or is it just my local maccas is staffed by numpties?
No, not hard to read at all - probably underpaid staff can’t be bothered.

Weird, half and half nuggets should’ve been easy to follow - i guess just staff aren’t bothered.
What's the general attitude of staff towards menu hackers?
Speaking for KFC add on hacks - Staff members don’t care - mainly managers get annoyed when they see ordering the add on without the proper family meal or combo etc.
mainly managers get annoyed
why would managers get annoyed?
are the KFC managers usually the franchisees of the store?
Shift managers don’t care - assistant restaurant manager and Restaurant general manager care - they don’t confront the customer but get annoyed
@Quarter Pounder: Does the customer feedback (or Google Review) of a specific restaurant,
reflect on the Restaurant Manager's "reputation" ?
Do they have a 'career path' that they are working towards,
eg. they want to work their way up within the company ?
or is it do with further future franchises, that they may want to get involved in?
why are the burger boxes always so oily
Probably workers not using the tongs to grab the meat and instead using their gloves which makes their gloves oiley and then when they grab the box, the oil gets transferred. Could also be meat juices seeping out of the patty
Who do you think would win in a fight to the death - the Colonel or Ronald?
Would have to say the colonel - haven’t seen ronald make an appearance in a while
He's not allowed within 100 m of local schools.
Why bother commenting :)
Snaaap
That's a burn mate,
Better get that blue band-aid.
You bothered
Yep!
What happens to the leftover chicken at the end of the night at KFC? Does it get tossed? Employees get to take some home?
Employees get to take it home, and it gets split with everyone who wants it
Apparently there are also some individual stores that don't do this, or at least try to prevent it.
At the two store's i've worked at both let us take it home if we did close.
@Quarter Pounder: Might also depend on the country possibly. I'm glad if it's uncommon to prevent staff from eating it.
Is that winner winner… Chicken dinner??
Winner winner 3 day chicken for dinner haha
What's the nastiest thing you've seen happen to food in a kitchen at either Macca's or KFC?
At maccas probably staff touching a bin, and then going right back to making burgers without changing gloves and washing hands.
I have seen exact same thing happen at my local KFC (which I have commented about on Google maps) ..
. Hand hygiene is non-existent.
There is a reason why that KFC store is rated 2.6 on Google maps.
Would it happen to be in the ACT?
Who's got the better staff discount? Are you sick of either yet?
Off shift it's the same 20% but Macca's do offer a 50% discount on shift. Depending on the manager at Macca's we can just make our own free food
Forgot to answer - imo kfc staff discount is overall better because it can be stacked with other deals, $5 wings and regular chips etc.
1) Why do you work at two restaurants?
2) In your expert opinion, are nuggets kids versions of a parmy or something different altogether? (Asking for a friend)
3) Worked out what the secret herbs and spices are yet?
1) Why do you work at two restaurants?
In all honesty a friend who works at Maccas claimed it was way better then KFC

Mini more processed Chicken Schnitty
3) Worked out what the secret herbs and spices are yet?
Think i've cracked the colonels age old secret. Salt and MSG
When I was in school all the popular guys got jobs at KFC. Is this still the case or can anyone apply now?
Pretty much anyone can land a job there with sufficient availability
How do you smell? Much acne?
How do you smell? Much acne?
Right after a shift? parents say I smell like KFC. No, surprisingly not much
Stares at forehead My god, you're oily!
Much acne?
Image of the pimply-faced fast-food worker, from Simpsons, come to mind
Are orders through the drive-thru prioritised?
Yes, because we get timed on them. The target for a drive thru order is 2 mins at KFC from the speaker box, and I think 3 mins at Macca's. However this also might mean the order is slopped together without care
Agree with this as a customer. Had a fair amount of drive through errors we often don't realise til we're home, sometimes it's easy to check at a glance something is missing, but other times, recently, we went to KFC, got a specific burger with specific sauce, etc, was told we'd need to wait 5mins, sure, 10mins later, we get it, take it home assuming it's correct, and it's completely the wrong burger.. So we had to wait for our specific burger which ended up being wrong lol. (KFC).
Maccas don't often mix up burgers etc though seem more likely to flat out miss things.
Assuming theres a few customised burgers at once at kfc, its much harder to tell which is which as we just fold back a bit of the wrapper to mark it ‘special’ (customised). Maccas have a grill slip which makes it easier for the person packing
Who is responsible for cleaning the dining area and toilets at KFC as it’s seems no one takes ownership. Absolutely filthy every time.
Front counter team members - i know one store has a dedicated cleaning person. The front counter people should check the foyer when its not busy, and clean as needed.
Does KFC still do 7-10-7?
181 degrees under pressure for 14 minutes?
169 degreed for Hot n Spicy at 11:30 minutes?
Not sure about hot n spicy as my store doesn't sell it yet. I know for 54 pieces it takes around 15 mins to cook
What kind of oil is KFC chicken deep fried in?
Canola oil. it comes in a box of 15L. Maccas use the same supplier as kfc.
For KFC, sometimes the fried chicken is seasoned nicely, IE: salty and flavorsome. Sometimes it's bland AF.
Is the spice mix pre done, and employees just need to bread it and cook it? Or are they mixing in ratio's and they miss the salt or something?
Is the spice mix pre done, and employees just need to bread it and cook it? Or are they mixing in ratio's and they miss the salt or something?
The spices are pre mixed - all we need to do is get 12kg of flour, 1 packet of breading salt, powdered milk and egg mix and the seasoning packet, and scoop and fold it 20 times, then sift it, repeat scooping and folding again, then the final sift. I know some employees don't sift it twice.
how do you manage 2 rosters, wouldn't the 2 organisations have to talk to each other to see when you are available to be rosters or do you block out days for one or the other
The latter I would presume, I don't see how the former is in any way reasonable.
block out days for one or the other
I do this - leave weekend availability for day maccas, night kfc.
Why does kfc taste blander these days compared with years ago when they boasted about their 12 secret herbs and spices? Do they not use the blend anymore, just salt and msg?
No, just i noticed we add around 1KG of salt to 12kg of flour, and there is MSG labled on the packet where the herbs are
Do the chicken pieces at KFC arrive at the store pre battered or do you have to dip them in fresh batter just before frying them?
The chicken is frozen. KFC cooks take them out of the freezer, dip them in water, then dip them in the flour/seasoning mixture (batter), then deep fry them.
It is not frozen. Nuggets, bacon, chips and popcorn chicken are, but everything else isnt. Preparation would take significantly longer if it was frozen.
We get chicken delivered 6 times a week and it is stored in a refrigerated room. Frozen chicken would be a nightmare to prepare.
Does also mean tenders/burger fillets and hot and crispy are all breaded from fresh chicken?
And I assume the fried cookie dough is frozen?
The chicken is frozen. KFC cooks take them out of the freezer, dip them in water, then dip them in the flour/seasoning mixture (batter), then deep fry them.
The chicken is not frozen, it comes fresh. One bag of chicken is what we call a 2 head, which is 18 pieces. We dip it in the water, coat in the flour and put it onto a half rack to be put in the fryer. Only drumsticks are double breaded.
So the secret herbs and spices are in the flour mix which means you can take this special flour home and make your own KFC?
@x x: We could, could even pinch a seasoning packet. But you'd need a pressure fryer as simply deep frying it isn't enough (tried frying one piece as an experiment) and it didn't turn out well.
What's happened to dining room cleanliness as both Macca's and KFC? I seem to remember back in the day (maybe 30-odd years ago), the dining rooms were well maintained with cleanliness a seeming priority.
While some individual stores can be better than others, I find both chains dining rooms to be in a pretty ordinary state these days (e.g. the last punters have left their packaging, etc. behind … I come in and eat my feed and the stuff that was there when I got there is still there when I leave). Not to mention actually wiping tables down.

At most stores, with the introduction of kiosks, and online ordering they've been able to reduce the staff that are on shift - somedays it gets so busy that we don't have time to clean the foyer.
While some individual stores can be better than others
Yeah, the maccas i work at is known for being dirty - bins overflowing at the front etc. At KFC it seems the managers care about cleanliness more.
Why cant the drive thru flogs ever get the order right..
How hard is it to count 20 nuggets in a box?
Do they get a bonus for screwing up orders?
Do you agree that small fries are a waste of time?
Why cant the drive thru flogs ever get the order right..
They're being timed, and at peak can be dealing with 15+ cars at once.
Do you agree that small fries are a waste of time?
I feel that small fries are okay for a snack, but maccas chips at normal price are overpriced
Are you still happy to eat at either establishment after working there?
Had a friend work at HJs and has never eaten there since.
Are you still happy to eat at either establishment after working there?
Surprisingly more happy to eat at kfc then before i started working there. For maccas i feel more hesitant to eat there
I share your experiences, i seen someone mop, touch the bucket etc, then go make a drink and fries.
Seen someone spray and wipe the prep surface and same gloves pick up nuggets UGH
Yeah, at the maccas i work at, it seems they treat handwashing as optional. At KFC we are strictly told to wash hands after handling cash, using chemicals etc.
@Quarter Pounder: And there are 2 colour coded doors, depending on Wether you have handled raw food?
Have you ever forgotten which store you are working in for that shift and accidentally followed the other store's procedure?
I have - not major but has happened :)
Who will win the AFL Grand Final this year?
GWS giants 💪
How long before a freshly fried fillet-o-fish must cool down before it can be served?
The oil burnt my tongue once on one and didn't know what to do
Never been told any guidelines on this - we do serve freshly fried ones if we ran out and are waiting for it.
is it all patties must be binned after 20minutes?
Procedure is, but procedure is only followed when there's a corporate visit which aren't random.
10:1 (patty for cheeseburgers, big mac) holds for 10 mins
4:1 (patty for quarter pounder, steakhouse stack) also holds for 10 mins
Unsure on the rest as never been told to do UHC timers
Is it true Maccas can't split payments over 2 cards or more or does the person serving just say you can't?
I've split payment at maccas cash and card before, person serving must not know. Can also do this at KFC
KFC yes split many cards many times as you want they are very nice
Maccas they said the system won't let them do card and card, just wondering if that is true
i read the question wrong sorry. Yeah, pretty sure thats correct. No prompt for a custom amount on the card when clicking eftpos on the maccas POS
How often is the oil changed at both establishments?
Sometimes fries (Maccas) and chicken (KFC) look brown/black, like the oil is due for a change or they have left it in the fryer for too long? If food looks too dark, is there a way to request them to be remade with new oil, or is it a lost cause?
At maccas i've noticed every 2 weeks the oil gets changed, but it gets topped up throughout the day. At KFC, it depends on the colour of the oil, and on all fryers, for the chicken fryer it gets filtered in the morning, and in the afternoon. For the chip/popcorn chicken/ nugget fryer, every 7-16 loads we get a prompt to filter - On the 17th load it locks us out from frying and forces us to filter.
