Saw a few old posts about AMA for maccas and kfc, and thought to bring up a new thread. I do the kitchen stuff at maccas, and at KFC i’m cross certified in all 3 areas.
Will answer questions i can :)

Its either steggles, or inghams.
Newcastle use Alan Steggles in some sites.
Do you know what chili is used to make the KFC supercharge sauce?
That stuff does dangerous things to my body and It would be good to know for future reference.
At KFC, how do orders from the app/website appear on the POS system?
Do you just see the line items the order contains, or do you see the names of the meals, the price they paid etc etc.
We use NCR aloha for our pos, we don't see online orders unless we press the online order button. We can see the order number, name, phone number and how much they paid and what they ordered.
names of the meal
We do see the name of the meal
Interesting, thank you.
thankyou for posting this. this was such an interesting read. hope you're doing well & managing ok
Probably not. Leave op alone
I'm actually intending to protect OP who is a minor from getting terminated by two big employers
As long as does not give too much info away. ;)
@BewareOfThe Dog: I’m probably breaching internal policies, but i doubt what i’ve said in this thread is enough to get me fired :)
@Quarter Pounder: Just be careful.
@Quarter Pounder: I'd like to think you won't get fired, just receive a warning. Please understand some employers have zero tolerance for breaches of these policies while others may be more lenient.
@BewareOfThe Dog: Exactly, OP just needs to be wary. For example, Maccas won't take kindly to the commentary about comparative cleanliness of their kitchens.
@sumyungguy: Maybe maccas should implement random corporate checks like KFC do, instead of notifying the store when their visit is :)
@Quarter Pounder: If you value your employment, just as a matter of courtesy consult your managers. They may consider this positive social media engagement… or not.
Why do I never get given napkins at KFC drive thrus? Is it policy not to put in the bag unless requested?
We're supposed to give you a cutlery pack but sometimes that can be overlooked. Is this happening across a few stores?
Yep. Constantly at 2 different stores an hour apart. Drive thru only.
Yes.
I always have to go and request a spoon, when receiving potato and gravy. It should be common sense.
When will my burger look like as clean, edible and tasty as the ones on all the images on their website and instore, instead of being thrown in a blender and slopped into the box?
what is the secret chiken wings recipe ? thanks OP
For crispy flour (Wicked wings, Original crispy, Hot n crispy boneless and zingers) We add 12KG of flour and then one packet of ‘crispy booster’. No idea whats in the crispy booster but it definitely has pepper in it
When i dont ask for extra salt my KFC chips are always under seasoned. Is this a lazy thing which varies with every store or the fact your shaker always gets clogged?
When they top up the salt in the shaker, they should always rince out and dry the shaker lid. Maybe lazy staff.
Why isn't H&S sold nationwide year-round?
Why does QLD get it year-round?
In QLD their stores are owned by Collins food group. They sell hot and spicy instead of hot n crispy.
Pretty sure some other stores owned by Collins in WA etc also sell Hot n spicy.
Some stores owned by Restaurant brands (KFC NZ owner) such as town hall also sell hot and spicy.
Is it a PITA when H&S rolls around and you have to make both? Or could you make both pretty easily without having to add extra machinery or modifying existing procedures?
We will see - something might be coming back soon ;)
@Quarter Pounder: I want to be excited but every time I've had H&S when it comes out as a promo (or even at stores that make it all year round) it's never spicy enough. Will still give it a shot if it comes out but expecting to be disappointed.
@Ghost47: Lol last time i tried to order it at a store that sells it year round, i just got Original.
Does anyone know which are the hot n spicy stores in WA?
How long are the training or induction regiments ?
How do you apply for KFC or McD (or HungryJacks, etc.?)
What is the minimum age for working in these sort of fast-food establishments?
What is the minimum wage at KFC? McD?
Do you get penalty rates (eg. weekends? Public Holidays?) ?
How long are the training or induction regiments ?
At KFC you do online modules, i did mine on my first shift which took about 4 hours. At maccas we have a crew trainer who will make you do some basic common sense modules, which explain maccas policies.
How do you apply for KFC or McD (or HungryJacks, etc.?)
Online via their website.
What is the minimum age for working in these sort of fast-food establishments?
Depends on the age - for me since i'm 15, $10.23 per hour on a weekday at maccas, $12.84 at kfc on a week night (i'm part time at maccas, casual at kfc.)
Do you get penalty rates (eg. weekends? Public Holidays?) ?
25% more pay on weekends for both, double pay on public holidays.
i'm 15, $10.23 per hour on a weekday at maccas,
$12.84 at kfc on a week night (i'm part time at maccas, casual at kfc.)
wow…that is low.
I thought, 20 years ago, a young teenager at McDonalds was getting $14 per hour.
Isn't minimum wage for an adult, something like $21-22 / hour ?
I thought an adult person would earn that much per hour, in fast-food (KFC, McD),
but a teenager would be closer to that $20 amount, and not something like $12 !
PS:
I think the Labor party is lobbying the retailer association now,
to pay teenagers (eg. 17-18 year olds) the same as an adult wage.
The thing is, I simply didn't think it was that 'low' at KFC, McD.
Wouldn't food delivery ('gig economy') pay similar as working at McD or KFC ?
I don't like the 'gig economy' type of jobs, but people always tout about their flexibility.
I'm full. That was quite the word salad.
I always modify my Macca's drive thru app order to remove salt from each burger (as well as the fries). is this annoying to the kitchen when these time-pressure drive thru orders come through? I prefer lower sodium where I can.
and if they had separate salt and pepper (it's combined in the app selection and therefore the kitchen shaker I presume) would that help in any way? I order pepper sachets to compensate. thanks
Removing it from the fries either gets you fresh, or extra oiley chips. Sometimes to save time the staff put the salted chips back in the oil to ‘wash’ the salted off.
From the kitchen standpoint if we’re following procedures its annoying to us. My store doesn’t put salt n pepper on anyway, as the dispenser is broken and management CBF fixing it
therefore the kitchen shaker I presume
Yeah, the salt and pepper comes pre mixed
Is it possible at either establishment to ask for your food to be cooked fresh? And in doing so, do you run the risk of annoying staff and they doing a worse job then if you didn't ask?
How is the general feeling for such a request?
Is it possible at either establishment to ask for your food to be cooked fresh?
I feel like this should be doable at maccas if there’s no rush. For KFC if you’re asking for fresh original recipe probably not unless you’re willing to wait 20 mins or they need chicken anyway. At both should be able to ask for fresh chips, nuggets and popcorn chicken.
I heard sometimes from front counter staff at maccas when the customer asks for something fresh, they don’t communicate it sometimes.
Forgot to add on - if you’re a nice regular we’ll remember you and make it fresh for you anyway - speaking for kfc
Op, you sound like you are ambitious, and will go places. Thank you for this.
2/3 Ts Salt
1/2 Ts Thyme
1/2 Ts Basil
1/3 Ts Oregano
1 Ts Celery Salt
1 Ts Black Pepper
1. Ts Dry Mustard
4. Ts Paprika
2. Ts Garlic Salt
1. Ts Ground Ginger
3. Ts White Pepper
That's the 11 herbs and spices for KFC?
I'd add salt and MSG to that, might taste similar
rat problem at the KFC store? rats are known to love those flower bags
No, we don’t have a rat problem, at one of the stores i worked at, we found cockroaches, management took it very seriously and immediately got 6 managers to come in and spray the sh*t out of the store with raid. They used maybe 30 cans in an hour
They used maybe 30 cans in an hour
The staff are still on oxygen in hospital.. and those that thought their chicken was cooked in new oil, may now understand the change in taste and why their eyes twitch and they have no sense of taste anymore
Are you able to tell me the supplier shown on the maccas beef patties box and the chicken patties box?
I ask as Ive always wondered if they are the same supplier as the one thatvi go to (halal store). Does not make sense for maccas to have different suppliers logistacally and quality perspective but have never actually been able to get an answer from Maccas.
My reseaxh shows only 2 factories in Australia that make the patties and both are halal as rhey export to asia.
So would love if u can check the boxes for wither factory or supplier.
Will check next time i get a chance
And can you please tell me the supplier of Macca's nuggets? Do they come to you in a blue bag out of curiosity?
They do come in a blue bag - from memory the spicy nuggets were from baida.
KFC nuggets are from steggles and come in a blue bag
@Quarter Pounder: Any idea who supplies the standard Macca's nuggets?
@Ghost47: Can check for you - It’s probably steggles or inghams. Will report back soon ish
@Quarter Pounder: Thanks!
@Ghost47: It’s baida too - kfc comes in a steggles box but says baiada
AUSTRALIAN FOOD CORPORATION PTY. LIMITED COOMINYA, AUSTRALIA Est No.187 for the beef
Omg thansk heaps…looks like they are from the factory that is halal suitable :) appreciate ur help.
We do cook bacon and the beef pattys on the same grill though
@Quarter Pounder: Thanks, yeah will avoid but just good to confirm my research skills were correct ahah. Any chance on the supplier chicken patties prob biada or ingham aswell? Assume those are fried ao should be fine?
@ArseneWenger: Baiada own steggles and inghams from my research, it's ingham
@ArseneWenger May I ask how you were able to check if it was halal from that info? I've always wanted to confirm this as well especially as I had a friend who worked at a halal-certified store who mentioned that their beef came from the same supplier which is also sent to other stores but could never get an official response from Maccas themselves
@Shekster: Hi, i was able to tell thst it was halal supplier through the establishment number he privided. All meat (chicken, lamb, beef) need to have establisment numbers when they leave the slaughter place and are packed. If you check eg chichken or lamb at coles next to barcode u should see EST followed by numbers (usually 4 numbers). That tells u what the arbiter was.
Go to https://www.halalfood.com.au/meat-establishment-number
And imput that numbrt.
Will tell u if halal or not.
@ArseneWenger: Thanks for the info, definitely very useful. And do all McDonald's in NSW have the same supplier for beef?
Why do fast food outlets mainly maccas miss items from an order whether it be condiments to missing ingredients in burgers to missing whole items? It seems to be happening 2/3 of the time at the ones I go to I'm convinced they are doing it on purpose, could that be the case? Should there be someone else checking the order before it's dispatched to customer or delivery driver?
I had the same experience today - ordered maccas for delivery and found that my burger was made incorrectly and they didn’t include what i paid to be added on.
Staff should double check your order before handing it out though mistakes do happen
That's why I don't order maccas delivery anymore. It's annoying when they miss items, ingredients or condiments. Almost every order had an issue. Also I didn't want to get banned from the app by always reporting missing or incorrect items.
Can we please get more filet-o-fish deals on the app…i feel like im the only one that really rates it. But full price is roo high….Soooooo gooooood
I have two accounts and I tend to get a Filet-o-Fish deal on either account once every 2-3 deal updates (i.e. on the Tuesday or Friday). Usually it's a small or medium meal for $5 - $6. It's pretty good :D I think the deal pops up if you use your account less. It's like they know that you like the Filet so if you don't use the app or visit them they'll give you a deal to entice you back. That or I'm just imagining things.
Ive got like a dozen accounts abd bever get them lol
That's weird, maybe you need to order more Filet-o-Fishes on a single account then not use it for a bit.
Thank you for answering my previous question about changing the fryer oil 🙂
Here's a fun one: In your time at maccas, which happy meal toy have you found to be the most popular?
What's that siren sound I often hear behind the counter at Macca's for?
The NURRRR one is a new Back area order - The doorbell one is for mc cafe, and the brrr brrr one is a new back area order for side 2.
Is it KFC policy not to give napkins unless the customer asks for some? And further not to give a wooden spatular when the customer’s order includes a potato and gravy ?
At Maccas drive thru most times at the pay window the person sends me on my way before my credit card is processed. Is that normal?
The KFC secret menu should always include a two fillet box item. (Not a question).
Is it KFC policy not to give napkins unless the customer asks for some? And further not to give a wooden spatular when the customer’s order includes a potato and gravy ?
No, we are supposed to include napkins and a wet wipe with every order - but admittedly we can forget. We should always include a cutlery pack with boxed meals/family meals too.
Has anyone ever requested to buy the frozen produce (like beef patties maccas, nuggets ect) or not allowed.
They have - don't think they've been allowed.
who makes the KFC dinner rolls ? my kids love them for school but i don’t want to go to kfc daily and ask for just dinner rolls
KFC - is the breading used all the same, just that some products require double coating?
When KFC was across the road from school it used to be one of our field trips and then we had catering from them for our special lunches but I don't think that could happen ever again in this now healthy society hahaha
@Daabido: What’s amazing is that it isn’t even a genuine Big Mac.
