    • Morning @dtingy our bag grinder is unfortunately still out of commission at the moment, hence why the deal is just featuring whole beans. Might be a good reason to get a hand grinder, as grinding on demand should improve your coffee experience ten fold, just food (coffee) for thought :)

    • Buy a grinder. Buying good coffee but not grinding it fresh is one step forward, two steps back.

    How do you freeze, do you just put the unopened bags in the freezer?

    • Additionally, the coffee arrives so fresh I’ve heard you should wait a couple days before drinking - would you freeze before or after giving it some time to age?

        Another great question!

        You can really get stuck into the good stuff as soon as you get it. Peak flavour will hit 1-2 weeks after the roast date, so you can wait or you can start enjoying it when it arrives and experience the flarour development over the first 1-2 weeks. Coffee is best enjoyed within roughly a month of the roast date and freezing can essentially stop time depending on your method. It's best not to take coffee in and out of the freezer repeatedly, so I'd recommend waiting 1-2 weeks after the roast date and then freezing into 2 week portions as mentioned to @tencents However, I know life can sometimes get hectic, so if you're more keen on just freezing a whole months worth rather than pre-portioning or ordering in 500g bag packaging then I'd say throw (gently place) the coffee in the freezer as soon as it's delivered :)

      Spot on, that'll do the trick. However, it you want an even better experience you could split the coffee into 2 week potions and then freeze 1-2 weeks after the roast date :)

  • I've tried quite a few different varieties from Lime Blue including single origins from various countries and M2M blend, etc and have noticed that the brewing guide (1:1 for milk and 1:2 for black) has been the same for every bean. Why is that? Is it because the roast level is the same and that dictates the brewing ratios? Or it's just a generic brew guide and you guys don't do trial and error to refine each guide there?

      Hey @thestig always better to ask than wonder!

      The brew ratios are based on a combination of the roast level and the specific flavour properties of each coffee. Although I agree that most of our coffees have the same brew guide, each brew guide is formulated specifically to each coffee, so it's not a generic blind copy and past brew guide system. For example, our recently featured Kenya Single Origin has a different brew guide to the examples you've provided :)

      • Can you (or someone!) explain 1:1 for milk and 1:2 for black?

        I understand that they are ratios, but does it mean for milk you add just as much milk as per espresso? and for black you add twice as much water?

          I'll focus on our espresso brew guides rather than filter, as my guess is that you have an espresso machine

          Black Espresso Guide 1 : 2 Ratio = 20 In : 40 Out : 27 Seconds
          Milk Based Guide 1 : 1 = 20 In : 20 Out : 18 Seconds

          I can understand how you've initially interpreted the rations how you have. However, the guides are just speaking to a dry dose in to liquid espresso out ratio. Looking at the black espresso guide example "20 In" is the amount of ground coffee you pack into the coffee basket (this dose varies based on your machine/basket size, generally 20g for a 58mm basket and 16 grams for a 54mm basket). "40 Out" is the amount of espresso liquid you're aiming to extract. "27 Seconds" is the contact time you're aiming for AKA how long is takes to extract the 40 grams of espresso liquid. We recommend the milk guide if you're adding 150-200ml of milk. We recommend the black espresso guide if you're having an espresso, long black or adding more/less milk than the 150-200ml range. I know all this info may seem a tad overwhelming initially, but once you've made coffee using the info, it should become fairly straight forward.     Can you help explain simply the difference between SO and Blend's - And why they usually use SO in Long blacks? Is it always better?

      Single Origins simply means the coffee was grown in 1 county. A blend usually means more than one coffee is used to create a specific flavour profile. However, technically a Single Origin can also be a blend by very definition. Speaking to the coffee industry in general the thought that Single Origins are "better" than Blends really depends on the specific instance. Without getting too specific (as we generally don't comment on other companies) the vast majority of Single Origins will be objectively higher quality than Blends, the reason for this is no more than straight economics by that I mean there no scientific reason blending two or more coffees reduces quality. Speaking more specifically to us (Lime Blue Coffee) the objective quality of our blends is on par with the quality of our Single Origins, as our blends are comprised of Single Origins we feature, we generally don't have components we only use in blends. Single Origins can be terrific, availability varies as does the flavour across crops, which can be a positive or negative depending on one's perspective. Blend can also be terrific, flavour can be consistent and available year round, which can also be a positive or negative depending on one's perspective. :)

      haha funny you should say that…a thought that's been rolling around in the back of my mind for some time now has been "should I design a coffee specific freezer….or are my ideas getting too far fetched?" I've made another order now for this (and some other beans) as it's obviously a lot cheaper.
