  • FYI I believe these are Chinese made. European versions will have 2 little men in the logo stamped on the blade.

    • Zwilling JA Henckels have the two men logo and should be German made iirc. Had some regular Henckels classics years ago that were Spanish so not necessarily Chinese for all models, but probably not made in Germany

      Personally, I think the Victorinox is too soft for home use (56 Rockwell). Chefs use them because they hone daily and sharpen regularly. Home cooks generally don't do that so would benefit more from harder steel.

      That said, I don't know the hardness of the ones in the post.

          Great, glad I could help! That one comes in at 60-61 Rockwell (VG10 steel) so should hold an edge reasonably well and be easy to sharpen. Sort of that sweet spot between the softer steels like the one posted and the harder steels like ZDP (67-70 Rockwell) which hold an edge for a super long time but when you have to sharpen them, it takes a lot of work because of how hard they are. Also these harder steels are generally reserved for super expensive knives so not really an option most consider.
