I know how much OzB love knives.

Cheapest I could find was Myer at $50. Even catch selling this for around $70 so $30 $25 $30 price point is cheap.

    Just a heads up for all interested in the purchase, they use 420J2 steel which means great corrosion resistance but not the so great at holding an edge. The knives will be easy to maintain (as they resist corrosion and are on the softer side) but will go dull pretty quick, so you'll have to sharpen them regularly. Being on the softer side they won't be too hard to sharpen, just be prepared to sharpen regularly to keep them cutting well.

      • Agree, there is nothing wrong with 420J2 steel as long as you know what you are getting into and not getting overcharged.

        There is no bad steel and all can be sharp, they just have different properties so pick something that is as close to how you want it to perform in the price range that works for you.

        I don't have experience with all types of steel but for example I have a set of 420J2 knives that became dull after about 2-3 mths daily use where as my X50CRMOV15 (this is Wusthof's typical knife steel) knives have been going for over a year of daily use and are just now starting to get noticeably dull.

        All knives will go dull eventually though.

          I feel uncomfortable using a metal with high amounts of chromium in close association with food tho.

            @cannedhams: Do you also avoid stainless steel cookware? If not I wouldn't worry about the chromium % in a knife.

      • Hell, I bone chicken with my Santoku - any sharp knife will do the job well enough - sure it isn't perfect, but I use the frames for stock so a little meat left on the bones doesn't hurt.

    Great that they come with a blade cover. Chuck one in your checkin luggage when travelling and avoid using crappy knives on holiday. Given the low cost, you’ll only be mildly annoyed when you leave it behind in some airbnb.

    I'm no knife expert but are rivets ok for longevity?

    • Rivets are fine, they're used on virtually all western-handled knives by Japanese makers (including high end ones) including Misono, Takeshi Saji & Miyabi to name just a few.

      Shun is an exception, in addition to most German knives like Wursthof and Zwilling.
