Coles and woolies also transport so much stuff across the country for no reason. They could definitely (if not easily) buy more in WA.

Not on hand, but basically they push their brands which are not Australian owned companies though they are under the guise the they are.
Take Harvey fresh milk for example. My friend's family runs one of their larger farms. They get paid the same small price for their milk yet Woolworths hike the price of their milk higher than other cheaper brands to discourage you from buying local/Australian owned.
Product placement too. All the local brands are not at eye height or 'buy height'.
Finally as for veg there's a small family in WA that has grown sweet potatoes for years. Woolworths didn't buy them this year because they were "too big" so that elderly couple needed to sell to my local veg store at almost $0 because they didn't meet the sizing the big company wanted..
Oh yeah also have you seen how much packaging is used too? Plastic wrapped corn.. plastic wrapped potatoes! WTF?

Also have a look at the colour of their beef and pork and compare it with the colour of your local butcher. For a while i only shopped at woolies and think I forget how good meat can taste! So much more vibrant and flavourful from the butcher. Yes more expensive but I'm happy eating less if it tastes that good
As for quality and availability, have you noticed they only stock the same things all year round? Have you tried asking for galangal, fresh tumeric, celeriac, and other common used veg? They go to such extremes to maintain consistency that seasonal fresh veg is lost because they want to provide reliability of their limited range.
