Roast Duck in 3 easy steps - If frozen, leave in bag and defrost fully in the refrigerator

  1. PREPARE: Preheat over to 190°C. Drain any liquid from the cavity, dry the skin with paper towel and season with salt. Never stuff the cavity of a whole duck only use this space for inserting herbs. This allows the duck to ventilate whilst cooking.
  2. ROAST: Place duck on a wire rack in a roasting dish and roast until golden and juices run clear. Approximate roasting time is 40 mins per kg at 190°C.
  3. REST: Allow duck to rest in a warm place for 20 mins before portioning.

    • Is it higher due to the increased wages? If so then that's fair enough.

    • It was $14 in the last few sales.

    • 15$ is cheap for 2.1 KG meat compared to a cabbage or lettuce that cost north of 8$ for a piece.

    • Was $25, now $26.20. I don't think <5% increase is unreasonable.

  • The retail price used to be $10 per kg, so they have increased priced by 25%. Bit hard to see how they can justify that.

      I'm not brilliant at Math, but these are 2.1kg, so less than $7.50 per kilo?

    • So should be 21 for a 2.1kg duck at 10 a kg

    • How did you get to 25%?? It was $25 for 2.1kg before and now it's $26.20. Less than 5%.

      If we're talking about sale prices, it's gone from $14 to $15. That's a 6.6% increase. Again, nowhere near 25%.

      • Maths 1,2,3 - Retail price was $10.00 a kg, therefore a 2.1kg duck would have cost $21.00. Same weight duck retail cost is now $26.20. That is a $5.20 increase.
        $5.20 of the base price $21.00 is 24.76%

          When?? I looked back to 2015 and it was $10.96/kg ($23/2.1kg). You're probably correct in the fact it was $10/kg at some point but saying "25% inflation" over 10 years say is only 2.5% a year, which is the target the RBA sets.. Economics 1,2,3.

          If you can show me evidence when the retail price was $10/kg I can work out the inflation rate for you :)

      And footlongs used to be $5. How long ago are you talking? The first recorded deal in 2015 for Luv a duck shows it's almost $11/kg retail. The fact it's barely moved in price in 7 years is super impressive actually.

      Look at beef mince and sausages prices 7 years ago and tell me if you think inflation is an issue for Luv a duck.

    • The increase in transport costs alone is enough to drive the price up. I used to by a whole cooked Peking duck from the local Chinese market. 4 years ago it was $31. Now it's $39. Buying these at $15 and cooking yourself with Peking Marinade and 5 spice rub is really easy.

        • I have an air fryer. I'll have to give it a go, though slow roast with salt and cooked in the oven is amazing.

    Bought one of these ducks from last deal. I cooked it as per instructions and it came out great. It's an extremely fatty animal - We ended up with about 150 - 200 ml of beautiful duck fat drippings which I filtered and keep in the fridge. It's perfect for cooking veggies.

  • Sous Vide is a great option. Brush with Char Sui, Star Anise and a little sprinkle of 5 spice if you like that kind of thing.
