  • I've been making sushi regularly lately. Can anyone tell why this is better than any other stainless / ceramic bowl?

    • the theory is to absorb excess moisture from rice and a big surface area for you to fan away the 'steam' to cool it down quicker. not sure how functional is 15" because the tubs i looked at is about 20" or more?

      • Hmmm… Seems all a bit based on nostalgia to me. Maybe beneficial if you keep rice sitting in it all day? - I make an entire batch at once. Looks pretty though.

        • it is for making in entire batch if you think of it as a restaurant setting… it's not a good idea to let rice sit around for way too long.

          for me, i am a lazy heathen, i use the microwave to cook my sushi rice and mix it with the same container. lol

      • i found putting the rice on baking paper on a sheet pan is a good alternative
