Wish I'd seen that video years ago (not that I could have, seeing it's brand new). I didn't know that soaking gets rid of the growth inhibitors. Would have saved me some $$$.
After several unsuccessful attempts growing store-bought, I ended up buying a plant from Bunnings for $19 or so this January. Not too bad, got almost 1kg of fresh Ginger from it when I harvested a couple of weeks ago.

I know a few independent fruit shops in Western Sydney that have been selling ginger for $8 or less (not that it helps the Oz B crew in WA)
Bit of a joke that Coles continue to sell it for $50/kg. Heaps of margin there.
Our local Foodworks has it for something like $35/kg.
Yeah they are plain greedy, I'm pretty sure Aldi sells it for $30/kg all the time.

Saw $10/kilo last week in Sydney. Still remember ginger went for $80 per kilo during covid 😅
I think it's same price at MCQ supermarket at Morley Coventry village, last week it was $19.99 a kilo.
It's $10/kg here in VIC local market.

There is 2 types ginger, the young and old ones. Most of the one you see for $10 to $15 per kilo are young ones which are harvested earlier. The old ginger are normally between $35 to $50.
Young ginger has a sweeter, lighter flavour and as it gets older it gets spicier.If you leave young ginger aside long enough.. will it eventually grow old and get spicy?
Yes, but only if you leave it in the ground. Once you dig it up, it won't grow old/mature.
It won't work if you leave it outside, it has to be underground in the soil.
Considering the state of the world right now, might be a good idea to practice growing a "constant" garden. One that you stagger the start times so there's always something to harvest.
Even snails are edible once purged and then fed whatever diet nets you your desired flavour. Higher protein than beef.
Harris Farm last week was selling ginger for $10 at my local and I think it extended at least into Wed (they might not have had a chance to update price labels).
I regularly buy ginger at rates cheaper than this.
Last week bought it at $14.99/ kg at local green grocers.
But in Sydney. Maybe a good price in WA.A green grocer near me was charging $50kg last week, they had it on the counter with no price on it so no one would steal it. They wanted $6.80 for a golf ball sized chunk which i wasn't prepared to pay.
