Seems like a good price for the 2 person Excursion Pro, has had good reviews on previous deals (for the price) for an occasional kayak that doesn't take up too much room in storage.

I have an intex single person kayak. Really well made and can be stored so easily. Highly recommended for occasional kayakers. If you are a pro, then obviously you would never consider this.
Being an inflatable kayak, how sturdy is this? EG: if I wanted to bring a pup with me on the water, would that be a no-go with their paws and claws?
I'd say no go because of the claws, but also the floor isn't flat. You could cushion it, but it's goint to be a lot of wet cushioning to make it flat for a pet.
You could line the floor with EVA floor mats or a rollout yoga mat to protect it from the dog. Harder to protect the sides though.
instead of protecting the kayak, you can put shoes or socks on the dog
I have a tyre inflator in the 4wd, anyone know if i could inflate this with that? or would the PSI be too high?
