        p.s. All our coffees are relatively similar in roast profile, we roast medium/Omni. If you're after a coffee with a lot of bitterness and usually buy shinny beans with visible coffee oils on the outside of the beans, we may not be the right fit for you. However, if you're after a delicious, sweet, smooth coffee with more of a full bodied chocolate flavour as opposed to a lighter fruity/floral flavour, then hopefully our Moments to Memories Blend should be a winner for you :)

      darker roasting does not make coffee stronger…
      See LimeBlueCoffee's comment - a darker roast will change the flavour profile of your coffee.
      Depending on the coffee, a darker roast can give your coffee more flavours, like: caramel, toast, chocolate, tobacco, hazelnut, toffee. But this doesn't translate to more caffeine in your coffee.

    How does this compare with the Brazil Peaberry Single Origin? I bought a bunch of them for my church and they loved it compared to the previous blends we purchased.

    I'll give you a go as:

    1) you give an alternate to Couriers Please
    2) you indicate the beans used
    3) your normal price doesn't look inflated for such coffee beans
    4) you appear to take roast date and delivery more seriously than some roasters we've had on OzB.
    5) delayed delivery offered (even though I'll be out of beans soon)

      I've had the Peaberry and M2M blend and M2M is definitely my preference. I think the Peru SO was my fav. Hard to recall, I've ordered so many beans from Lime Blue now :)

      Thanks for sharing the helpful feedback! The Brazil Peaberry is a quite unique coffee due to the combination of low growing altitude, small surface area and natural processed. It shouldn't have tasted burnt, however I fully appreciate everyone interprets flavour uniquely. Did you have the chance to read the email I sent out with brewing tips specially for the Brazil Peaberry?

      With regard to comparing Moments with our South Central, Moments is far closer in flavour to our South Central than any other coffee we roast, main difference you'll find is Moments is a bit less fruity and a bit more chocolaty than the South Central. Please be sure to let me know if you have any more questions :)

      I haven't had a Syphon in a little while, I should jump back on it soon, I had a Moments Pour Over today and loved it (hopefully that doesn't sound too biased haha). All our coffees are Omni roasted to suit espresso and filter. Do you enjoy your coffee when it's chocolaty, fruity/floral or a bit of both?

      Black Espresso Guide 1 : 2 Ratio = 20 In : 40 Out : 27 Seconds
      Milk Based Guide 1 : 1 Ratio = 20 In : 20 Out : 18 Seconds
      Stovetop = 7g per Cup Size
      Filter Guide 1 : 16.67 Ratio = 6g Coffee : Per 100g Water

      From a technical extraction perspective our Moments to Memories blend works really well enjoyed as a black based coffee, for espresso and filter methods.

      Without sounding too biased Moments to Memories is delicious black and is tremendous value for money coffee (although true, it does sound like an extremely biased comment haha)! That said, different strokes different folks, so the only way you'll truly know if it's a winner for you is to try it :)

      If via espresso machine, what sort of brew ratio and timing are you doing? I've tried espresso and lattes at the respective recipes above, getting good extractions but espresso's borderline undrinkable, 150 mL lattes are ok but weak (and I'm no coffee snob). Really need to play around with temperature now to see if it suits something different than other medium roasts I use if the above recipes aren't in error.
