Even if you run out of NVME slots on the MBO, you're able to purchase a PCIe 3.0 expansion card. People can also buy, an external NVMe enclosure. So, running out of NVMe slots, is unlikely the reason, for why this is bought.

Correct. However, that's only a pcie 3.0 x4, so bandwidth might be an issue, if running more than one NVMe.
@Haliax: Only one of the M.2 slots is NVMe. The other one uses the SATA port to connect to the motherboard SATA…

I have one of these (not this brand but the intel one) and NVME uses the same bandwidth as the NVME drive anyway, so some mobos if you go NVME you lose all or part of your PCI slot anyway,
I did it as it was cheaper for the capacity/preformance at the time personally
