Dan Souza from America's Test Kitchen did a video about Chickpeas recently that included a hummus recipe https://youtu.be/qKGqT-3Uypk
I haven't tried it yet but Dan is usually The Man when it comes to these things. He said canned vs dried chickpeas didn't matter too much but recommended cooking canned chickpeas a little to help remove the skin to make it extra creamy. I think he also adds baking soda (not sure?) to the cooking water to soften the skins
