My butcher does the boning for me. He's a professional boner. He also plays the Trombone, he's also a professional Tromboner

I was waiting for this….and you didn't disappoint 😁
Might be good for trimming brisket fat for those into American BBQ
Related question - why is brisket so damn expensive here in Australia. I thought it was meant to be a cheap cut!
It's been fashionable for a couple of years now unfortunately..
Good for the average Joe though, since a few years ago they wouldn't have know about it and there are more restaurants popping up.
Not good for prices for sure.
Average price of brisket is $4-$5/lb USD, which converts to around $12/kg AUD
I think Costco here has them for $13/kg, so with GST the price seems about right. Coles is $14/kg for the flat.
Costco USA has them for under $4/lb and that's prime grade (I think $3.79USD).
Anyway, prices are probably cheaper in the US because they are a bigger market.
Shame it's just 16cm…I need a bigger one for my 2m flatties!
Looks like the type of knife that Salt Bae uses, that seemingly cuts through steaks like a hot-knife through butter
If you can get into the freezing works and find a decent 1 meter diameter slow wheel to dress it on then you're made. Avoid cutting paper and/or the table and you'll be able to shave with it. Quench often as this will heat up a bit quicker than the carbon steel ones such as Green River or Koh-in-Noor
The only beef cut we didn't trim by putting the blade under and lifting was taking the skirt out of the flap.
Think Salt Bae uses a F Dick.
yes F Dick breaking knife

What is “swibo”?
In the 1960’s, WENGER created a new type of professional knife for butchers, under the trade name SWIBO. Since then, WENGER has consistently evolved and improved the line, and today it has become a standard of reference in this demanding product field, acknowledged throughout the world.
Ok!
Right so it's a Victorinox Wenger Swibo.. not confusing at all
