      Related question - why is brisket so damn expensive here in Australia. I thought it was meant to be a cheap cut!

        Average price of brisket is $4-$5/lb USD, which converts to around $12/kg AUD

        I think Costco here has them for $13/kg, so with GST the price seems about right. Coles is $14/kg for the flat.

        Costco USA has them for under $4/lb and that's prime grade (I think $3.79USD).

        Anyway, prices are probably cheaper in the US because they are a bigger market.

      If you can get into the freezing works and find a decent 1 meter diameter slow wheel to dress it on then you're made. Avoid cutting paper and/or the table and you'll be able to shave with it. Quench often as this will heat up a bit quicker than the carbon steel ones such as Green River or Koh-in-Noor

      The only beef cut we didn't trim by putting the blade under and lifting was taking the skirt out of the flap.
