  • Having both this and a global I feel with the warmth of the wooden handle this knife gets selected more often but both great.

    • I have the Global as well, the handle is quite thin.

  • +1

i remember using this brand in commercial kitchen and suggest trying one first as they were heavy knifes kind of like the best quality but not most
comfortable to average user, i always go back to victricnox knifes for ease of use.

  • It would be nice to know what the steel is. 57 rockwell doesn't mean much by itself - it is too soft for many steels, ok for some. 15° is great only if the steel is good and tempered well. It is usual for good knife manufacturers to mention what the steel is. If there is no mention of what the steel is that is usually because the steel isn't that good.

    • it's PROFESSIONAL S, from the photo.
      From zwilling website
      Substance: German Stainless Steel
      Blade hardness (HRC): 55-58 HRC

      so likely x50CrMoV15

  • I’ve just racked up enough points at Coles to get one of their Masterchef knives and opted for the Chef’s.

I didn’t expect much but was pleasantly surprised. It certainly comes sharp and I found it reasonably well balanced and it cuts straight when going through things like sweet potato. I’m not sure yet whether I like the feel of the handle. It might be a little on the thin side from what I’m used to, but it’s not bad…. especially for $0.

  • looks like same model 31021-200 from the photo, $116.41 delivered from amazon UK

$49.99 USD (71% off) for a different model (same HRC), but not sure how to ship it to AU though

difference between pro and pro s if someone has a friend in US to receive it.

I've had one of these for over 10 years and it's still going strong despite others putting it in the dishwasher every now and then. Holds a good edge and I like the weight.

    • good, heavy weight

    That bolster 🙈

  • should i get this or a shun knife?

    • Germans make very good knives however Japanese take knife making religiously. So what do you think?

    • It’s a matter of personal preference for which style you prefer and depending on how you like to cut.

For example I prefer Japanese knives becuase I’m more of a precision chopper, my partner prefers German knives becuase she rock chops.
