    It's dry aged for 90 days. Thus the inflated price.

    For reference, I just finished dry ageing a roast rib eye for 57 days. Started out at 5.2kg and ended up at 4.181kg. That's a 20% loss in moisture alone. Now deduct another 303 grams lost for removal of the pellicle layer.

    Edit: I thought I had replied under Garage Sale's comment. Evidently not. :-(

      I almost bought a mini fridge for doing it, but couldn't get the ok from the boss.

        Ela Steak Locker. I could never get the WiFi part of the fridge to work, but other than that it's been a good fridge so far.

  • Do you need to trim these (of the "dry" parts) or can you cook these straight out of the bag after seasoning?

  • Got my steaks today and they look great,nice thick pieces that will cook up really well in the water bath. My only gripe is I wish they packaged them two the pack rather than three. Next time I will put a comment in the order asking for two steaks per pack.
