I bought this for $50 from BigW years ago. Used it maybe three times before putting back on the shelf and never touching again. It works, but really, do you want smokey food?
The smoke doesn't go into the food but sits on top as a veneer of smoke. It's not like eating a great piece of smoked salmon that actually transforms entirely due to the hot smoking process.
So just for the 'gram then?
It looks sexy when contestants on MKR open a smoke filled cloche and everyone says 'oooohh ahhhh!'. That's about it really.
That's a good assessment. Chefs have loved these for years, for adding a smokey note to food, and you'll still see them in high end restaurants, but the smoke they give you is very acrid, and nothing like smoke from a good American barbecue.
So no, your sous vide brisket or pork jowl does not taste like barbecue because you gave it a whiff of smoke in the bag, no matter how much you tell your friends or customers it does.The reason is that your wood chips don't burn cleanly. White smoke is full of creosote and unburned particles that impart that nasty smoke taste. Good barbecue burns very cleanly, with almost invisible smoke.
