    This knife is extremely poor value compared to numerous other alternatives, such as a well priced Victorinox or similar, or if you want a high end knife a hand made custom. Contact a knife maker, tell them what you want for how much, and you will get a better knife than this for your money.

      Can you provide an example rather than just saying "well priced Victorinox or similar" I paid $149 for the Shun 15cm Chef's knife about 10 years ago and it has been a marvelous knife. Japanese knives are very different to European knives, so wondering why you think this is poor value. I was about to pull the trigger on this one til I saw your comment, would like more specific information.

        Forget that guy, he has no idea what he’s on about.

        Shun premier knives (at sale prices) are great entry level Japanese knives. They are very forgiving being stainless with hardness levels around 61 HRC (less likely to chip than your white/blue steel blades), offering a good trade off on sharpness for durability. That comparatively amongst other Japanese blades, they are still razor sharp and somewhat fragile compared to your run of the mill European style chefs knife.

        I run their 15cm premier knife as a utility knife. It cost me $150 and is my cheapest blade, however, it is still a very good value knife.

        While you might be able to find other cheaper VG10 chef knives out there, the steel used is a small part of the story. The heat treat they go through is very very important, and Shun is a well known brand that have very predictable blades. Spend less and you’ll probably wind up with a poorly made (treated) blade that performs dismally.

        • hmmm I like that term 'predictable blades'. Makes me think of Globals… some (of the exact same type) seem to sharpen up very well, others - not so much. Of course word is there are TONS of fake Globals out there.
          A note on Shuns' from my XP… I like their thinner bladed knives (a LOT), the thicker ones are more meticulous to sharpen.

    • you are comparing $50 knife vs $200 knife, may be the Shun you got a is a fake (plenty of them arround). And would you give a detail of a knife maker that can custom made me a knife for less then $200?

      You obviously aren’t a ‘knife guy’, which is fine, just don’t pretend like you know.

    I've been cooking commercially for 27 years, love my Shun, I don't like Victorinox (their pastry knife is ok).
    Just my two bobs worth.

    • They are good, though I far prefer the Shuns' with thinner blades. Much easier/less fussy to sharpen in my experience.
      Thin bladed Shuns' are remarkable IMO.

        but if you are looking for value for money,you can get Victorinox chefs knife for $60,it's more than enough,even for commercial kitchen

  • Dammit, finally decided last night that i would pull the trigger on this, but it was late and I went to bed. Went to buy it just now and its out of stock ;( silly is the ozbargainer that doesnt grab the bargain asap.

  • Got mine today, this is a serious graduation from all the other German knives designed or made and all the other useless sets lying unused. Sharp as buggery and a sliced finger already! You get what you pay for!😊 Next steps would be to learn who to keep them as sharp as they are out of the box.

    • The only real negative about their knives, you need to be even more careful when learning to sharpen compared to other knives. Their super high polish finish will show up scratches from a wayward stone movement like nothing else!
