75% off crap is still 100% crap.
A cheap carving knife made from stainless steel is just a waste of money. It flexes too much and is hard to keep sharp. It is not fit for purpose.

I'm giving this a neg as a product that is not fit for purpose.

EDIT: Carving knives were created when the only suuitable metal was carbon steel. They were rigid and sharp. Stainless carving knives are only suitable for use as an intimidatory weapon.

      • So you're saying that the only decent knife is a Carbon Steel Carving knife?

So rule out Wusthof, Henckel, Shun etc?

What brand do you recommend then?

        • -2

I don't recommend any. Carving knives are essentially obsolete. Personally I use a $5 Kiwi brand for all my needs. It is cheap steel but thin and easy to put an edge on with a steel.

It needs a bit of practice for a large cut.

EDIT: took off the implied insult. It's just not worth it.

Is there an OzBargain badge for surviving a single neg post with a crappy username?

bread knife etc also on special, challenge for people will be finding a store that has stock and reasonable distance for c&c.

i have seen these knives, i didn’t like the handle shape, else were you’re typical chinese steel, made to german alloy composition formula, similar to $100 knife set eg pyrolux.

with knives it depends on the shape you like, and then the alloy composition eg high carbon which is brittle and hard to sharpen vs low carbon less brittle and easier to sharpen.

german steel formula is typically lower carbon than japanese steel which is higher carbon, hence different bevel angles between western and japanese knives in angle of bevel and how sharp they seem.

Excellent points. Too bad carbon steel knives went out of fashion (predominantly because they tarnish). I suppose the 'lid prylors' also broke many a tip' with the more brittle ones thus adding to the disfavour in comparison to the more forgiving stainless/alloy composed knives.
Same thing happens with those $$$ Jap' knives folks. God, use a spoon or even a dang' fork to pry with… or keep a screwdriver in the utensil drawer! :OS
A well sharpened ancient carbon' is every bit as good as a ridiculously expensive Jap' knife IMO. Sometimes I think they are better.
But it is fair to say that I've seen some exquisite slicing done with a well sharpened Jap' as well. I just think you can get near as good for 1/3 to 1/4 (and less) of the price.
I would add, I think there is a lot of merit in what Snoovey's (now hidden initial) comment(s) said.
