    is a BS claim. Just about any carbon steel will be hardened beyond c60 and is significantly more edge retentive.

    • Then are there any you'd recommend better priced? Im thinking my parents need a decent set other than Ikea knives haha.

      • Depends on style of cooking. If you're doing European style cooking, ie lots of crude cuts through or around bones, I would get a cleaver (from CCK), a 21cm cooks knife and a 12cm paring (anything in a 52100 steel). Dollar being weak makes it hard to get below the $350 mark.

        For Asian cooking (bite size and deboned food), a 21cm cooks and a 15cm paring is sufficient. The price limits you to Blue #2 steel. Prone to tarnish but with some basic good habits, they're magnificent blades.

        More knives usually mean you'll cycle through all the suboptimal knives until they're all dull before any maintainance happens. Just go minimal.
