Maybe people expect that their next TV will be 4K and want to future proof

Isn't the WiFi better or some other extra feature.
The ultra comes with a USB power supply that has an Ethernet port on it, it's the only way to have a wired network connection to a Chromecast. I have a 9 year old HD Tv, and I still bought the Ultra for this reason.
You can buy the adapter to use with gen 1 or 2, for Ethernet connection. Also there is a thread on whirlpool dating back to 2015 that explains how to do it (before the adapter was available). It is however Ethernet via USB but still, it’s wired

New chromecast out soon if you wanna wait. Not much changes besides improved Wi-Fi.
