And the other thing these burger places do is give you the smallest plate possible with a limited number of very thin napkins.
Gotta cut costs somewhere.

I don't get how people like that. Give me two normal sized burgers over one tower of oil and fat any day.
the catch is often it’s for illustration purposes, they don’t often quote the cooked meat pattie weight …..
so when it’s freebie time it’s hard to know how big it will be …..
WTF is a smashed Wagyu patty? Do the get the Wagyu drunk before sending it to
be slaughtered? Do they take a normal patty and smash it then sprinkle it over the burger?
It's like pulled, you don't ask.
when you "smash" your burger patty down, you're creating more surface area for the Maillard reaction to take place
we do smash burgers all the time ….. have 2 spatulas, one to put on the pattie and the other to squash the other spatula down with.
trick is only squash one side. don’t do it after flipping or you will press the juices out as by now the meat is 1/2 cooked and releasing juices.
How are you suppose to eat that burger stacked so high??
Also, what does Kangaroo meat taste like?
It's quite game-y. You can sort of tell it's a wild animal you're eating, not one bred specifically for meat who lived in a paddock. This might be fancied up a bit, though.

Kangaroo doesn’t taste too bad, although I find the cuts you get at the grocery store can be a tad hit or miss in that it’s often a bit tough. Worth a try though.
I don't think it's that gamey. It's very lean though, barely any fat so I would have thought wouldn't make a good burger. That's probably where the Wagyu comes in as that's fatty.
Best roo I've had is the Chicken parma at The Napier (Fitzroy) which comes with smoked roo strips on the top. (Well at least this was a dish several years ago)
The chicken parma with roo is one of my favorite dishes there! Absolutely amazing and really good value for money.
Still there as of a month ago.
It's like a strong beef.
If you like the taste of rare to medium-rare beef, you'll love medium, to medium-well done Kangaroo.
IMO it's the best meat out there. It can be tough, but minced, that problem is gone :)
poor mans venison … has a lean taste ….. try it, with the price of beef, global warming , etc one day you will be eating more of it.
unless the chinese develop a taste for it and we start to export then it also will become expensive …….
