Given they are both fully synthetic 5W40 and meet the same specs for manufacturers, I'd say you would not notice any difference between them.
Shell Helix ultra hands down is one of the best oils in the world.
Same oil used by Ferrari, Dodge SRT, Hennessy Performance and Maserati
Castrol Edge has better brand recognition among the general public. More people know about Castrol Edge than Shell Ultra. However Ultra is better recognised in the racing circuit.
Got no opinion on the functional aspects though.
