      Yes I have one of these n they are pretty good. Most chefs use these.

        i don't think globals are used much at all in commercial kitchens. victorinox forschner stuff is much more common.

        most chefs would probably think you are a bit of a tosser for buying expensive status symbol "prosumer" "foodie" knives to display in your house.

        Seriously, that is a joke length. 25cm would be absolute min.

          I've used a variety of knives in 'serious' restaurant kitchens including a 20cm (Sabatier) chef knife and, for vegetable work, a ~17cm Fury East West knife.

          There's a lot more variation in the contents of a chef toolbox than you might think

          Just because it can be used, doesn't mean it is the right tool for the job. If you are a true professional, this doesn't need to be explained. Nor should you encourage newbies to use the wrong tool.

    • I own the 17cm (asian) chef's knife (the one that comes in this set) and it's an excellent knife. It retains its sharpness for a long time and the knife is well balanced. Previously i was just using a knife block set by Mundial.
      I recall paying around $90 alone for the single knife when it was on sale so $145 doesn't sound too bad for a set of 3.

      You'll need to buy a decent sharpener for the times you do need to sharpen it, as the edge is not sharpened in a symetrical way (i think it's a right-hand knife).

    • Global are decent brand. However go try one out at a shop before buying. The handle is a love/hate thing with this brand. I personally find it far too thin.

      Depends on what you like. Global is an OK brand for knives. CrMoVa 18 is a decent steel, though not amazing. Some people find Global knives too light, some find the profile doesn't have enough of a belly, lots of people find the handle too thin. The blade profiles on this particular model looks very awkward to me.

    Worked in a 3 hat restaurant. Every single chef did hate GLOBAL. lol

    • I think it is an excellent knife for a home cook. It is an affordable, reasonably high quality knife and normal people don't want to spend $200+ on a single knife. This is a step above crappy Wiltshire but obviously below something like Shun
