Honestly, I've never had Prosecco. It got 3.4 stars out of 5 on Vivino. Vivino says to pair with seafood or cheeses.

Best guess is Rutherglen Estates 2012 Sangiovese but the price seems a bit off. Might be vinomofo over-hyping the price or it could b something else.

In case anyone wants to know how to make killer gravy.
When roasting beef, add garlic, onion and various herbs (I like rosemary with the wine) into the cooking dish. After the beef is done, take out the meat and leave to rest. While your beef is resting throw the roasting dish onto the stove and once its pretty hot, mix in a tablespoon or two of flour. Add bit of beef stock(or water if you don't have any) and scrape off all the lovely beefy stuff off the bottom. Put a glass of red wine in there and whisk it while it reduces. Once its the thickness you want (might have to reduce it for 5-10minutes depending on how much liquid and how concentrated you like it), pour it into a serving jug. Quickly clean the roasting dish while its hot, it shouldn't be hard because you already deglazed it with the beef stock. Once you're done, your beef should be rested, gravy ready and you should be good to go!
