You should do some research into the different types of metal used in knives. Easy to sharpen usually means it'll go blunt faster. Harder materials can hold a sharper edge but tend to be more brittle and more difficult to sharpen.
You can get a cheap knife sharp, but it'll probably go blunt quickly and the balance of its weight might not be so good

Agree. Victorinox are not considered a crappy cheap knife though. They're always voted as the best budget knives for the 20cm chefs knives category, with their 20cm/22cm fibrox chef knives costing around $50ish.
I have a Victorinox rosewood 22cm cook's knife, can say it's a pleasure to use, although after a year, I did reshape the edge to have a sharper angle (using a Minosharp small blade guide rail with a whetstone (plenty on ebay). The big and small come in a pair that's obtainable from Peters @$12, usually $15+ everywhere else), feels like the knife is reborn again.
Note this Santoku is 17cm, may be a bit short for people who prefer longer edges, but should be quite sufficient in everyday tasks, 20cm/8" blade length seems to be quite popular but it's personal preference. Very very good price from COTD since Peters of Kensington also sells this exact product for $54
Is the benefit of a "good" knife like this that you don't need to sharpen it frequently?
Also your cutting style, chopping board used. If you use a hard surface like a metal sink, or a glass cutting board, expect your knife's edge to be completely blunt at the end of the day. Use a plastic or wooden chopping board. Rock chopping (where the blade never leaves the surface) may cause a bit more wear on the edge as well.

Aren't Santokus designed for more precision cutting than your standard chefs knife 20cm+?
I prefer using a santoku to cut smaller vegies as I feel i have more control leading to a thinner slice, fast slicing…
My chefs knife is for something that requires more grunt.

I disagree. I find the Santokus actually ends up with a thicker slice (blade almost feel wider when cutting) than a nice chefs knife. I end up using it for my "heavier" cuts that require more grunt.
I have a relatively cheap chefs knife I have had for years. It loses its edge after a few uses and you have to touch it up with a steel, but works a treat for almost every task thrown at it.

paid $35 and happy to do so, used $10 for sodastream earlier and didnt see this, great knives specially if you have big hands an spend an hour or 2 doing prep, Ive used a ton of knives over the years but this is my preferred very comfy handle and blade will last a while before hitting the steel
