If drinking within the first 3-4 weeks then in the valved resealable bags that they come in and then in a cool dark place like a cupboard is ideal.
Following this if you plan to keep longer term then I suppose freezing once at the beginning would be a preferable option. :-)
I read years ago that freezing coffee is a widespread crime. Something to do with ruining the oils, IIRC

No problem, thanks for asking. It went really great! Flora and Brendan got back yesterday from a 9 day trip, 4 days of which they spent at the Shanghai Hotelex Coffee Expo showcasing Brewover and networking with distributors and other industry members.
The expo was huge and they had us of a stand in a prime spot making specialty coffees on Brewover. Other days were spent visiting our manufacturers, strengthening relationships and carrying out quality control on production and setting up international distribution logistics.
I thing there was also a lot of eating by the sounds of it ;-) While this was all taking place unfortunately I was back here holding the fort and roasting coffee.
We already have 36 Brewovers in the country as it is being used in the Worlds Richest Barista Competition coming up shortly in Brisbane at Cafe Biz and various other upcoming events.
Production has nearly finished now and the initial few thousand are not far behind. I'll send out an update over the next few days with more detail and photos to keep our backers updated and included in the process so far

This is with all due respect but can you 'sell' me your coffee.
I have just purchased the $99 Sunbeam machine (I have no expectations from this in comparison to say a $300+ machine) and I also have a french press.
Considering the machine and press I'm using, am I wasting money on good (great) coffee like yours vs the supermarket brands?

The proof is is the tasting ;-) These are all specialty grade coffees which is not usually what you find in the supermarket.
Also a major factor in how good a cup of coffee can taste is how fresh the beans are. Generally speaking after roasting coffee is best drunk in the first few weeks. After this the flavour profiles will drop off and you'll be left with stale coffee. This is normally what you'll find in the supermarket, low grade stale coffee which has been sitting on the shelves or in a warehouse for months.
You should find these deals are pretty comparably priced to the supermarket option and it's fresh roasted and delivered to your doorstep :-)

i don't have a grinder, can you grind them for an aeropress? or is this a no no?
Normally whole bean only on these deal threads and would ensure that the coffee stays much fresher for longer if you grind as you go!

If you're thinking about drinking fresh roasted coffee on a regular basis then I would highly recommend investing in a cheap burr grinder which should suit Aeropress fine!
Do yourself a favour and get a Hario Skerton and fresh grind your coffee for the aeropress.
You don't want to have 2kgs of ground coffee lying around, but the time you get to the second bag it will no longer be such great coffee.
Thanks for putting extra bags in the dropdown! Not quite as useful for the 4x480g deal but these will be fantastic for the 1kg bags.
If anyone is wondering - if you're anything like me, it takes about a month to go through a 1kg bag. Opening and closing it repeatedly degrades the beans rapidly compared to leaving it closed. When you open the bag the first time, divide it amongst the extra bags, then close them and (if the bags are new) seal them using an iron - you can put baking paper between the iron and the plastic if you like. You can reuse the bags of course, but personally I would only freeze bags that have been heat sealed (i.e. ordered new) to avoid the risk of any moisture getting in. It's perfect for the 2x1kg bag deals where it can be almost 2 months between getting the beans and drinking them.
