I make soup out of these.. it's tasty as :p

(8 chorizos, 1 red onion, handful garlic, 3 tins tomatoes, parsley, bit of salt)

As for me, I buy Coles Habanero Chilli's (heat warning), and make a lovely pasta sauce with garlic, oil, and 1 or 2 Chorizo's with some canned tomatoes. Cheap, packed with flavor, and will last a few days in the fridge.

Alternately, maybe try a Paella.
