If you can then that's great. You would need to register it to a British (not European) Club Nintendo account. I'm not sure if you need to have a Wii U registered to your account to claim this though, if so then you would need a British Wii U as well. The T&Cs don't say anything about it.
Technically you can still get the free game with a UK account on your Wii U and a UK Club Nintendo account. These are pretty easy to create, but probably not worth it if you'd rather keep everything attached to your AU account.

Aren't UK Club Nintendo codes redeemable on Australian accounts though? I've registered countless imported 3DS games with my Club Nintendo account. Or did Nintendo specifically say that you can only get a free game with Australian Mario Kart 8 copies?

You can get a free game when you import from the UK or buy it here, it doesn't matter. If you import you have to redeem the code using a UK club nintendo account and UK eshop.

As I said before, I've been able to redeem UK imported codes (for 3DS games) onto my Australian Club Nintendo account just fine. What's to say that I can't redeem the UK version of MK8 on my Australia Club Nintendo account?
Thanks, I just googled and realized that, just like PS3 and Xbox 360, any games downloaded via one account can be played by any other account on the same console. Do I just set up the uk account by putting in a random address, à la PS3?

You wont be able to as you get a code you need to put in to redeem your voucher, and you can only use one code based discount per order.
