IF so, what are the trade-off's with plastic?

I notice they're selling the D5100 kit for $750 when you can buy the D5300 body here (http://www.eglobaldigitalcameras.com.au/nikon-d5300-body-onl…) for $700 and invest about $100 for a quality non-kit lens.. you could get a brand new camera package for $800 instead of paying $50 less for two-year-old technology. Ridiculous. Hardly normal, you could say. Not that great of a bargain.
And which lens would that be for $100? Even that will barely get you the 50mm Nikkor, and it's a lens that you don't want on a crop body for general use.

Nikon D3100 18-55mm is very cheap, grey is about $420 delivered at the moment, most of the cameras are pretty cheap as well.
Going by all the models they are all last "seasons" cameras as most of them have been replaced by new models at the start of this month.
I want a 5D mark III.. they dont have :(
This is hardly ridiculous! People who wants to get in to photography the D3100 is an excellent DSLR. It may be old technology (2010-2013), but the image quality you are getting with this is as good as the Nikon d3 or d700.

Yeah, no.
The D3100 is solid, especially for an entry level camera, but the D3 and D700 were both exceptional. They are FX (full frame) where as the D3000, D5000 and D7000 series (basically all 4 digit Nikons) are DX (smaller, cropped sensors). DX (and equivalent Canon stuff) isn't all bad, having to buy FX lenses gets very expensive and very heavy.
The main difference will show up when shooting with high ISO settings. So for sports, indoors, and night time stuff the D3 and D700 will standout. Other things like autofocus, metering and so on also make a difference to image quality.
Rockwell likes to bang on about how he loves cheaper camera bodies, and he has a bit of a point. Unless you know what you are doing to a reasonable degree, you will struggle to get the most out of a basic SLR, and this won't be improved by buying a high end body. But to claim image quality is on par with two of the best full frame SLRs Nikon has made is just untrue.
do any of the dslr shoot panoramic shots on the list?
This one does. I got mine recently and it captured some great shots at the tennis, which was my first 'sports' test run!
which one? the specs of the nikon D3100 says it doesnt do in camera panoramic…
