I'm pretty sure that all modern ceramic knives use a ceramic mixture that contains some iron, so they will show up clearly in X-ray scans.

For what it's worth, I bought mine (including mandolins and peeler [the peeler sucks, don't get it*]) at King of Knives back in 2005:

All Kyocera branded (back then, the most common brand, mebbe the only one)Be aware, IMHO, you get what you pay for: I bought a ceramic knife from Aldi last year (I think) for $18(? I've forgotten). Can't cut anything without significant force applied - I've thrown it away - it was so crap that I didn't fear holding it by the blade edge. Whereas with the Kyoceras, they are like a corporeal light saber(sic); in the beginning, I used to have to prepare mentally :-p before using them, they are that sharp. You put it across any organic material, start pulling back and it will start slicing through like the proverbial butter. Many Band-Aids later, I've gotten the hang of it.

What makes it better? I own knives and a sharpening stone.
Ceramic is meant to be harder than steel, so it keeps the cutting edge sharper longer. The downside is they are fragile and can break if dropped. Keeping the edge from going dull on a steel knife is best done by regular stropping on a leather belt before use, and regular use of a sharpening steel. Often the blade isn't actually blunt, it's just that the very edge is microscopically bent over from use, and stropping or steeling will straighten it and the knife will magically appear sharp again. There is no need to grind or use a sharpening stone all of the time, all it does is remove more and more knife. Grinding or stoning is good for fixing damage and chips though, and is occasionally necessary. To use a sharpening steel with a knife, the steel has to be harder than the blade. In the case of ceramic knives, you have to get a special "steel" which is harder than the knife. I think it is http://www.ikea.com/au/en/catalog/products/10167004/. I'm not sure if you can sharpen ceramic knives with a stone or by grinding.

Thanks. I've found out that in order to sharpen ceramics, you need to use a diamond sharpening stone, something like http://www.ebay.com.au/itm/Diamond-Sharpening-Stone-Block-4-…. Diamond is the only readily available thing which is harder than ceramic.
My mistake, the IKEA ceramic sharpener is made from ceramic, so it is only good for steel knives. To sharpen ceramic knives (or steel), you need http://www.ikea.com/au/en/catalog/products/50191931/ which is diamond coated stainless steel.

You have to assemble the allen key yourself too, these days.
I like the idea of ceramic knives, but they're not practical. I've had 4 sets of knives and my GF has broken all of them! The last knife she tried to de-pit an avocado and broke a perfect semi-circle chunk out of the knife.
Live alone and get to have cool things or live with GF…
Lucky they weren't $200 Kyocera knives. LOL you would have been literally spewing blood if she did that.

Bought a set of ceramic knives from Ikea a couple of years ago. They're still going fine and generally sharper than my steel knives. They chip easily though so watch out when trying to chop hard objects. It's $60 I don't regret spending.
a hacking knife?
Got 4 sets today, springVale, there was half a pallet left at about 11am. There was a queue for them at 10am apparently! Almost everyone I saw in store had 2 sets on them lol. They seem quite well made. Actually, at $3.33 per knife they are incredibly well made.
