@jv: Yes it does. It just has longer before this happens. If there's carbon in it, it'll rust. Some companies replace carbon with nitrogen, which make them actually non-rusting, but none of the regular mass produced kitchen knives available in regular stores do so.
@jv: Yes, but the addition of carbon to iron to harden it (thus turning it into steel) adds to the rusting compared to knives that use nitrogen for this purpose.
Stainless knives use the addition of chromium to form a passive protective layer. Nitrogen steels may use chromium too, but a significant role is played by the fact that they reduce the carbon content to by increasing nitrogen. It's still not great, and I'd prioritise those knives for salt water application vs land-based applications.

I tend to grip the base of the blade between my thumb and index and drive with my palm - blade grip
The distance between the handle and the blade is too big so you need to use a pinch grip. I also have a callus on my index finger, just above the knuckle on the inside of the finger

g2 is all the home cook needs. a lot of chefs use these knives as well.
Ex-chef here. Can confirm lots of chefs use them, but I feel like it's all hyped up and I didn't really enjoy using it. I use a pinch grip and it hurts my index finger when I cut harder things. It holds shapeness well, but it's a step down from VG10. IKEA sells a set of VG10 for a lower normal price. Never used it, but seems like a good alternative.
I got a g-16 the larger handle suits me well. Plenty of good knives around for less than $100 a piece.
