      Glad you got an order in during our super special in November, thank you for the order. Just to clarify the price hasn't increase by "over $5 per kg," it's just that when you purchased in November it was part of our Black Friday/Cyber Monday deal. At that time there were a number of factors in play which made that pricing viable and it's a pricing that not viable all all times. A few factors at play in November included more online traffic in general and our coffee cost was based on prior contract pricing. We're no longer in the Black Friday/Cyber Monday peak hour traffic and we're also now into our new Brazil green coffee contract pricing which is higher than our prior AKA online traffic is reduced in January and our costs have increased, so this deal's for 40% off instead of 50% off. Fingers crossed it's still enticing enough of a deal to be a winner for you :)

      • Hey thanks for the reply. I will probably go ahead with the buy but I have a couple questions.

        I purchased some Moments to Memories Blend recently also (yet to be dispatched on my selected date) but can you please give me a comparison of how these two coffees compare? I like my coffee with milk. What difference can I expect with the 'Moments' coffee?

        If I understand correctly, the beans should be frozen for storage? Does that mean I simply put the bags straight in the freezer or do I first place them in a zip lock bag or something else? Do I need to go as far as to vacuum seal them?

        • No disrespect but anything even decently close will be well north of $35-45/kg. I would happily pay up to $60/kg for decent SO bean's but I for one am very grateful LB and the deals they kepe churning out, it makes it very hard to pay more than $30/kg elsewhere these days when one of his deals doesn't align with my shortage.

            However, I could not financially justify what you are able to justify. And it's not as if I was complaining, just making an observation. I'm pretty sure you would have also been happy to pay $23 per kg for the previous deal.

            Things aren't always as black and white as they might seem.

          Sounds terrific!

          Nice questions, always better to ask than wonder :)

          1) Moments will be a have slightly higher sweet earthy notes and acidity kick. By comparison, our Brazil Single Origin will have notably stronger chocolate notes, sweetness and some fruity background notes. Generally speaking if someone enjoys one of the two they'll likely enjoy the other one as well

          2) Correct, but if you plan to get through your order within about a month then you don't need to freeze. A few freezing options, each has good results, the more effort you put into the process the better the results like with most things. Easiest way is to simply put the whole bag in the freezer once it's delivered. Middle effort option is to wait about 2 weeks from the roast date, pre-portion into fortnightly quantities then freeze. Max effort, wait about 2 weeks from the roast date, pre-portion into single doses, vac seal then freeze

              Essentially it's so when you take the beans out of the freezer they're already at peak flavour, as peak flavour hits about 2 weeks from the roast date :)

    If I was to order 2 for example to qualify for the free shipping and froze one bag (approx. 1 month), do you loose any of the flavour/crema etc? Never frozen coffee before and instead usually just paid the shipping, but seen your suggestion above. If it was to degrade by 10% I'd be fine, I'm a coffee snob but not to that degree, but if it was to degrade further than that, I'd probably just pay the shipping. Would love to know your thoughts. Thanks!

      Great question. Based on your detailed take I believe freezing coffee will be the winning option for you and I don't think you'll notice any degrading, in fact if you super freeze coffee you can actually achieve better flavour, but you'd need a commercial freezer to get to that level :)

    • My personal experience is that it needs to be vacuum sealed before freezing otherwise the moisture levels affects the beans.

  • I used to switch between the various posters here but I've been solely purchasing from Lime Blue for over a year now and nothing has come close to the quality for the price. Brazil SO has been my go to for most of that period but the Peru was very nice when I tried it recently (awesome on ice), so will be trying that again as well as the recent Bolivia SO deal.

  • I hear and read quite a bit, from both the comments on Ozbargain and on Reddit, that freezing the beans does result in a loss of flavour.

    I watched James Hoffman's video on freezing beans and he mentions that most residential freezers do not go to the temperatures needed to completely eliminate degradation.

    I am quite keen to do a bulk order, portion into 250mg ziplock bags placed into the freezer, and allowed to thaw for several hours before grinding.

    Any further thoughts on freezing and degradation?

    • I get 3kg an order and I leave them out for 2 weeks post roast date then put in the freezer, and when I need it (few weeks to month later) I take a bag from freezer to fridge for 24 hours and then top my grinder up, and usually have about 300-400g in there at a time. I used to stuff around only getting 22 grams from airtight bag every time and to be honest I can’t taste the difference.

      TLDR freeze it, you'll be fine.

  • I ordered Peruvian from the previous Lime Blue deal and am happy with the beans and service.

    Wondering if someone could please explain what the ratios printed on the pack mean and how they are achieved when using an espresso machine?

    For example:
    Black espresso guide 1 : 2 ratio = 20 in : 40 out : 27 Seconds

    Milk based guide 1:1 = 20 In : 20 Out : 18 Seconds

      Glad you've reached out, as it's always better to ask than wonder. The first part is the ratio, which I'd recommend following as a guide regardless of the make/model of machine you have. The part after the = is an example of the ratio in practice. To be more specific in terms of the ratios, they translate to the amount of ground coffee used to extra a multiple of that ground coffee in espresso liquid. For example, if you use 20 grams of ground coffee, then your aim is to extract 40 grams of espresso over the course of 27 seconds. Generally 20 gram doses suit 58mm single wall double shot coffee baskets and 16 gram doses suit 54mm single wall double shot baskets. We recommend the black espresso ratio for espresso, long blacks, piccolos and larger coffees over 200ml in volume. Our milk based double ristretto guide works best for milk based coffees (flat white, latte, cap) where the total volume is 150-200ml.

  • Is there any way to tell how "decaf" the beans really are? I bought some decaf beans from another vendor and I can tell it definitely has a significant amount of caffeine because I immediately start getting jitters. I know there's always going to be residual caffeine from the removal process and I can handle that as long as it's not over-the-top.

      The Swiss Water Decaffeination Process removes ~99.9% of the caffeine from the beans :)
