I couldn't go back to cheap cutlery, at least at my own place. Obviously not going to take cutlery when I go out. I think the most obvious thing you notice with cutlery is the weight.
I'm kinda fussy with chopsticks too. I don't particularly like using Chinese or Korean chopsticks. I find Japanese chopsticks the best.
What's the difference between the 3?

Yeah, Korean ones are often flat and made out of metal. I find them really hard to use especially if you need to pick up delicate food like tofu.
Chinese chopsticks are longer and chunkier and while I can use them no problems at all, I just prefer Japanese ones which are usually shorter with fine tips.

Japanese ones are fine, but I prefer the Chinese ones. I guess it's what you grew up with, and what feels right

The weight is more about whether it's cast or stamped. The cast cutlery can have more material in the handle to balance the weight. I don't think you need to spend a lot more to get a cast set.
I honestly don't know much about cutlery but we have an expensive set and it just looks and feels nice. I like the way they feel in your hands.

Not really. But super cheap cutlery often tends to not last and even be comparatively awkward/uncomfortable to use. Stanley Rogers and similiar are a good medium ground.
I bought fancy cutlery on sale via Ozbargain at $2 a piece, and I think it's worth it at that price. That's more like $3 or $4 due to inflation. Grab a 16 piece set of 18/10 sometime and see how it goes. Personally I really like that I can't bend the spoon on too-frozen ice-cream.

Gifted out a bunch of 18/10 cutlery from a previous deal and then later everyone's telling me "Wow, they don't bend in ice-cream".

FYI, Royal Doulton set says dishwasher safe. Stanley Roger’s set recommends hand washing, if that means anything to anyone
Both are likely safe, but anything metal I would be drying immediately after washing. Even the finest stainless steel is rust resistant and not rust proof.
Is it stilring silver? Has to be for the price and to be a deal.
I don’t think your everyday family wants to be sitting around polishing their sterling silver cutlery every week. iPhones are more the rage these days

Does anyone have any first hand experience between the quality of this set and Noritake Rochefort 56 piece cutlery set?
Can’t speak for this exact set but I do have a royal doulton set that we received has a gift 4 years ago. It’s this set on sale for $719 down from $1199.
So far it’s been great. They get a lot of use and are in the dishwasher daily. If the quality is the same I’d highly recommended. It’s something you could use easily for 10 years and not have to replace.
It is nice to have something reasonable if friends are coming around for dinner. I bought a set of Villeroy and Bosch Marchesi on special about 20 years ago and they handle well and look good.
