Better learn how to handle those stainless steel pan before you get it.
Step 1: Actually get it hot. If you think it's hot enough, it's not, get it hotter. If you you need to check, flick a drop or two of water into the pan, and if it dances around instead of immediately burning away, it's hot.
Step 2: Only when it's extremely hot do you add the oil, it should shimmer when you slide it around the pan.
Step 3: That's it, there's no step 3, once you have successfully put cold oil into a hot pan, stainless steel is the easiest to use, most versatile pan you can get, with virtually no "rules" to it's use. You can use metal utensils on it, cook highly acidic foods for hours on end, scrub it with a metal scourer.

What if I wanna cook at a low or medium heat?
It becomes sticky.
heat it first, put oil in, reduce heat.
The high heat is only for adding the oil - You're essentially temporarily seasoning the pan by doing that.
Afterwards you can cook at any heat you want.

The long handle plus the short handle across it make storing this pan a pain. Takes up so much space.

Tempted to get some but would probably still go for my worn anodized aluminium pan, but that won't last forever.

half tomatoes aren't the problem. It's the egg sticking to the pan. Will try to heat the pan really really hot.
Yeah I don't eat eggs typically but heard stainless no good for acidic foods. Obviously an egg would stick unless use a lot of oil.
So if you hear really hot can use water or still have to use oil? Would smoke up pretty bad.

Not going to lie, we have a bunch of these and man the long channel like handle shape really can be annoying on the larger (heavier) sizes. Feels so awkward to handle and digs into your palm.
Still we use them everyday just something I noticed with these damn handles
I would recommend the 28cm IKEA SENSUELL for $70 it's full clad. The Baccarat is only tri ply base.

Not true full clad is tri-ply all the way around the pan. This is only a tri-ply disk bottom pan.

@G-rig: Full clad pans are more expensive as it requires more material. Full clad has better heat retention.
Disk base may some time have a better even cook depending on how good the claded base is because they can make the base thicker.

@Quickshot: Ah right, cheers maybe I'll give it a miss, and check out IKEA next time (but they don't sound that cheap). Already got a 26cm ss pan I don't use.
@G-rig: $69 for a well-made stainless steel pan is really not a lot of money, given it's likely life-span - No reason a full clad stainless steel pan can't last for well over 10 years.
@Vinnie Vegas: Yeah could well be good, Just sounded like a lot for an IKEA brand. Not a fan of the handle and extra high sides really but wouldn't be a bad choice I guess.

We have Baccarat stainless steel pans (unfortunately given as a gift I was overruled on returning) and they are absolutely horrible. The RRPs are a total fantasy that House have conjured themselves so as to still make them profitable during their monthly 75% off sales. I do not recommend.
What would be your recommendation or choice if you did return them?
Looking at replacing a few none-stick with SS but not really researched yet.
Have a look at the Kirkland ones from Costco, if you're a member - I have them myself and I've never found a thing to complain about

Yeah 32cm massive, barely fit in the cupboard etc.
I think a 20, 26 and 28cm would be ideal.
