The "cellular" smart watches seem to be more hard work than they are worth, from research you can get a compatible esim from Telstra and Optus but you seemed to need a $60+ a month plan at least to add these onto (for another $5 a month).
I don't know if there are any concerns around the 4G "000" drama, will these qualify as compatible when the 3g network turnes off?
You can get watch only plans for $10.99/month or $99/year through BetterRoaming.
These are 4G so no worries about the 3G switch off.
Is there a way to link that eSIM number to an existing boost sim from my phone? Or is it going down the data path e.g iMessage for texts etc. so just wouldn't be able to take regular calls.
No. You need to go with Optus, Telstra or Vodafone directly and use their Number Share / OneNumber / NumberSync plans.
The BetterRoaming plan is not associated with your iPhone number.
Your provider needs to support the number-sharing scheme; you can't get a separate number for the watch itself.
If you've already got a plan with Optus or Voda it's a $5/month add-on. $10/month is Telstra.

Postpaid only. Telstra Wholesale is apparently launching One Number for their MVNOs late this year, but the hints are it'll be on the $50+ plans.
In my scenario, I just need a cellular model for my kid who doesn’t have a phone. It can be a different phone number to my phone which is to be used to setup the watch, assuming I don’t need “sharenumber “ and any eSIM would work?
