I cannot stress this enough…..DO NOT use one of these. Stick with a regular travel SIM or use roaming provided by your Aussie carrier.

It's quite possibly a license for them to collect an awful lot of data. That's about all I can tell you for legal reasons.

it is given during immigration checkpoint and found out is pre-synced with your passport details and asks for your birthdate via SMS when you sign up, if you provide the wrong one it doesnt work. Creepy.

This is basically a state sponsored Man in the Middle attack. Anyone who can set themselves up between you and your data endpoint, be that email, http, whatever, unless your data is encrypted on your device before it is sent, it is free for them to see and collect. Sometimes called other things like eavesdropping, harvesting, etc.
Even if your data is encrypted they can likely figure out what you've been looking at using metadata including DNS records. And as mentioned above, physical location tracking.
A bit of a step up from the old stingray days where governments used a device to get similar information.
Use strong encrypted VPN, no IP leak, no dns leak, no webrtc leak, encrypted sni, no http exposure.
For DNS records, use encrypted sni (ESNI). Usually I use NextDNS that can block ads, trackers, malware, a lot of filters can be applied, logs in Switzerland (more privacy) that can be removed every 1 day or 7 days etc. or even no logs at all in NextDNS setting.
