Yes the latency is improved with the wireless dongle over Bluetooth.
If streaming, it may not be related to the controller though. Could potentially be your network too.

PS5 controller has haptic trigger feedback and touchpad which the xbox controller lacks so one would assume the ps5 controller would cost more.

any battery is fine the ikea rechargeable battery is much cheaper
I only buy official xbox accessories made by Microsoft, and the best thing with the official battery is you can just plug in the usb c port and it just chargers like any normal controller.

ALL of them that you see sold individually are counterfeit. Microsoft don't sell them individually anymore and haven't for some time.
Also look at the seller, selling that. Do they seem like they would sell a genuine one? The only companies that would sell genuine are brick and mortar retailers like EB games, JB Hi-fi, Big W etc. They all sold out a long time ago and Microsoft stopped selling them separately.

Either way I use the controller with my PC for causal single player games so latency is not a big deal, with FPS games I use a mouse and keyboard
