Please note Geisha has a very specific flavour in the direction of floral and tea notes. If you want a coffee similar in flavour to most other coffees then this isn't the one for you. Also if you only enjoy coffee with milk and don't like black coffee, this also isn't the one for you; not a coffee snob comment at all, put simply the floral notes don't pair well with milk, so it just won't be an enjoyable coffee with milk. However, if you're open to a coffee flavour adventure and want to treat yourself to something extra special (this is a competition level coffee, coffee from this Estate has been used on more than one occasion in World Barista Championship, even to win a WBC Title) then this is the winning coffee for you, I absolutely love it!!!       Morning @APN Adelaide coffee is proving to have many magic powers haha aside from kick starting people's morning's it's being used to help save the Panama canal. The Panama Canal Authority have already invested $32,000,000 in a program to plant coffee trees along the banks of the canal to help with the environmental issues relating to the canal due to recent droughts e.g. land erosion. Fingers crossed the initiative saves the day :)

      • I wonder if the traditionally sulphur-rich fuels powering the ships using the Panama canal will give a meaningful influence on the flavour profile from coffee grown in this region. Interesting times! Thanks for the great write up on the coffees offered in this deal.

        • Hmm that's an interesting point @ColPow11 hopefully there will be measures in place to prevent this happening as a decent chunk of the investment is around agricultural education. Along the banks I believe the vast majority or even all of the coffee is Robusta, which is a lot hardier and mostly used to make Instant Coffee. The coffee featured in this deal isn't related to the canal and the Estate looks more like a tropical rainforest :)

  • Forgive a silly question, but what the heck is 'Omni Roasted'? Does that equate to like a medium on the typical Light/Medium/Dark take scale?

    As someone who normally goes for light or light-medium beans, is the Peru Chanchamayo going to be somewhere around that?

      Morning @noisymime not a silly questions at all, always better to ask than wonder!

      Omni essentially means a coffee is roasted to suit both espresso and filter styles of extraction. Our Peru is a medium roast. Our Panama Geisha is a light-medium roast. If you are mostly keen on very lights roasts then we may not be the best fit for you. However, if you do enjoy coffees closer to the medium level they hopefully you'll find some real gems with us :)

  • Hi, my all time favourite beans are "Stellar" beans from Sensory lab (https://sensorylab.com.au/products/stellar-espresso-blend?_p…). I love them because relative to other beans/brands, I find the Stellar beans to be very smooth, not bitter and a little sweet, almost honey like.

    The website says the beans from colombia.

    Do you have anything similar? Smooth, strong, a little sweet.

    Edit: as a point of reference, I got the Thank You blend in a recent deal, I find it's more bitter and definitely not as smooth

      Hey @anthman appreciate you taking the time to reach out!

      We sail in our own direction, so generally don't comment on other companies, so although I can't give an exact comparison, hopefully my response can be somewhat helpful. None of our coffees are notably bitter, so if you're ever finding a coffee to be bitter, please shoot us an email as the shot may be channeling, which is a relatively simple thing to fix via email. I have a hunch our Brazil São Paulo Single Origin may be the winning choice for you based on the description of the notes you enjoy :)

      • Can confirm. I must have had all their beans by now and I drink them black (filtered, moka, espresso, French). And they are not any bitter than any of the other beans I ever got.

        The first batch is always an adjustment to the grind and water, but smooth sailing after.

      • Cheers , do you have a check list re:, channelling?

        Here is my process:

        Using a Breville bambino plus + Breville smart grinder pro (grind setting 13 sec).

        I'm using a bottomless grouper.

        Basket holds about 13grams.

        1. Grind coffee into basket in grouper
        2. use WDT to break up chunks in circular motion
        3. Lightly tap grouper to settle grind
        4. Tamper using spring load tamper that has a lip to remain parallel with basket
        5. Extract (I press the DBL shot button)

        What I've seen when extracting: it extracts from all across the underside of the basket, coming toward the centre before a single stream starts to form. Sometimes it squirts coffee at random angles (maybe too packed?).

        On the whole, extract looks good (good creme), abit above double the weight of the grind.

        What are the signs of channelling? Maybe Im doing something else wrong?

          For the Bambini I'd highly recommend using a 16 gram dose in the single walled double basket. From there dial in your grinder to extract ~32g of espresso over roughly 27 seconds. Once that's on point you can decide whether to follow the black or white/milk based brew guide. The good news with using a bottomless portafilter is channeling is super easy to spot, the coffee spraying at random angles means the shot is channeling.         • Appreciate the follow up @basketballfreak6 I won't speak on behalf of all of Panama, but I've found the coffee from this specific estate to get better year-on-year and with that the price goes up every year too. The pricing of the Geisha in this deal isn't due to a negative, we've just tried our best to make this deal good value for money and we'll continue to maintain that goal :)

              The super dooper special good stuff can get quite up there in price. That said, when you get to the top echelon of any industry the item becomes more of an experience to purchase than a simple product and with that comes a hefty usually comes price tag, especially when something's rare. However, if that experience creates a lasting positive memory, then it's worth every cent!

    • Hey @luckylittle appreciate the request!

      We have pondered sampler packs in the past, but as we strive for a roast-to-order model, the operational element of sampler packs is a tad problematic. I'm not saying we won't offer them in the future, but it is something we've spent some time on in the past and didn't find the winning solution. In the meantime most of our options you're able to get in as small quantities as 500g, so that may be a good path for you to try some of our different options :)

    Stellar price on the Geisha, I’ve not seen it that low since pre-COVID times. I reckon it won’t last long.

    Having said that, I’m giving the Peru Chanchamayo SO a try in both the half- and full-strength versions. Tom - is this likely to remain one your regular SO coffees?

    Keen to try the geisha, but not sure I’d be drinking it every day. Would it freeze ok? Or is that blasphemy with beans this special??

      I like the sounds of that. Freezing coffee is like casting that Harry Potter spell on the beans to make the stop in their tracks. Freezing is perfectly fine and in fact I highly recommend it, as it drastically slows oxidation and thus extends freshness while frozen for months, even years if vacuum sealed. No issue with drinking it every day, but personally I'm in your boat with not having this Panama Geisha every day. Simply because I'd classify it as a weekend coffee; you've the regular go to coffee you enjoy Monday to Friday, but on weekends it can be really nice to treat yourself to something extra rare and special :)

    Has anyone tried this decaf and compared it to Campos decaf which is sugar cane process decaf, really nice body and sweetness to it, not sure how this one would compare?

  • Hey Tom,

    Does the Geisha have a lot of 'funk' or 'alcoholic' notes to it. I've had some carbonic macerated coffees before and they were very funky and drinkable. I really like fruity and floral coffees, but with some of them, the processing had taken over the origin characteristics of the bean.

      You are right that some CM coffee are super funky. However, the CM process doesn't add new flavours it simply enhances what's already present in the coffee. This Panama Geisha is a washed process coffee, so it's not funky or winey in flavour. The CMs you've experienced as super funky/winey I'd guess would be Naturally processed in cooler climates dried in thick layers to extend the fermentation time :)

      You're welcome to ask anything you want. I've created the roast profile and will be personally roasting it. It's a great question you ask, however, I hope can you appreciate technical info about the roast profiles I create is something I keep close to my chest. For sake of comparison reference, have you had any of our coffees before?

      • Fair enough. I've had the Brazil SO and swiss decaf from last year. I don't remember how the Brazil went but I dug through my freezer and found a bag of the decaf and just cupped it. Could taste a very slight smokiness so if the geisha is roasted lighter it should be fine. I drink filter so very particular about roast depth.
        Do you cup the geisha after roasting and will there be any roast notes?
        I'm just concerned since you offer it as an omni roast and I've had only a handful of them that do well as a filter (mostly from overseas roaster). Not trying to look down on the local roasters but the market here is geared towards espresso roast and omni roast is a very hard line to straddle (might be impossible for some beans).

          This Geisha is a bit of a lighter roast than those two. However, I'd classify it as a light to medium roast, so if you're only looking for a light roast that really only works for filter and not espresso as well, then I don't think this one will be the right option for you. I believe it is possible to have a coffee well suited to both. However, I do completely appreciate personal flavour preference is subjective, so I have full respect for your perspective. I think it's wonderful as a pour over as I had one this morning, but it's really up to you to decide and at this price if you're on the fence I'd say it might be best give it a miss and perhaps try the Peru as there's less cost risk if it's not a favourite for you :)

      Hey @based fantastic to know you're a fan of our Colombia SO!

      Similar and still notably different. If you enjoy one I'd be surprise if you didn't also enjoy the other as well. Here's how they're differ. The Colombia has a bit of a higher acidity kick and more fruity notes. The Peru has more sweet earthy, chocolate notes and a slightly lower acidity kick. Hope this info is helpful :)

  • First time order, bought 2.5 kg beans: 2 kg of Peru Chanchamayo and 500g decaf which got me into the free shipping bracket.

    Just arrived and drinking a Mokapot black, of the Peruvian, watered down 30-40% after brewing.

    It's got a surprising amount of flavour for a black coffee, but quite acidic. I possibly got it hot too quick (after preboiling of course) or need to adjust grind as the pot started spitting before it had finished boiling and then I didn't get quite the liquid throughput (cancelling the brew with cold water after it started spitting again and the pot was only about 75% full after filling the reservoir to the pressure valve).

    Overall quite nice compared to the cheap beans I had been buying, but I'll have to get it right to serve it to my wife with milk

  • Panama Finca Deborah Geisha Carbonic Maceration Shade Grown Single Estate Coffee - what a mouthful!

    I do love your coffee! I still find it hard to tell the difference between the taste of beans. It feels like such a slight difference when I brew a milky moments to memories vs a thank you blend. I genuinely don't know which one I like better! I just rotate daily.

  • Hey @LimeBlueCoffee, couple of questions:

    1. My Peru SO origin beans are arriving today and I'm keen to dial in my machine (Brev BE) for a single shot. I noticed you gave your dosing / timing recommendations for the Bambini above, but couldn't find your recommendations for the Peru. Any similar thoughts you can share?

    2. I've been filling my hopper and freezing the remaining beans sealed in the original bag + tied up with a rubber band, then I refill the hopper as needed and continue to freeze the remaining beans. I repeat this until I'm out. I get through approx 1kg every 5-6 weeks. Would I be better off keeping 1 x 500g sealed in the pantry that would last approx 3 weeks, and freezing the other 500g, then leaving that in the pantry? Or is freezing immediately and thawing on demand equally good?

      2. I'd recommend the 500g in the pantry and 500g in the freezer option. Of course you can stick with your current system, but taking the bag in and out of the freezer does increase the chances of freezer burn occurring. Out of pure curiosity, as our bags have a resealable zip lock, why do you need the rubber band?
