I missed out on the Fujitora Gyuto the other day and was browsing to see what else is available.

I noticed this petty knife and with the same VG-10 core it looks like a great deal for those looking for a smaller 15cm blade.

This is the same knife as the Tojiro DP Petty without the Japanese after sales services like sharpening.

This knife is selling elsewhere for aud ~$95 on eBay, 8250 yen (aud ~$80), usd $60 (aud ~$90).

  • Is this a good knife for filleting fish? Or if not, is there something similar kicking around on special?

      This is more like a fruit knife/ light general purpose knife with I assume standard thickness and edge. Filleting fish ideally you want thin/long if it's purely fillet, or for processing fish you want the thick spine but that's maybe a bit too specific. I wouldn't use this for fillet. Blade length too short for fillet as well.

      This is a general prep knife for those who prefer a smaller knife, I'll use my chefs knives for most tasks.
      I don't fillet fish so hopefully someone else can comment on that. You might know what you need based on any struggles you've been having with your current knives.
      I recently picked up a $20 Mundial curved boning knife and it's been a game changer for breaking down whole chickens and legs of lamb.
      Things to consider are length, curved or straight, rigid or flexible blade.

      Are you actually able to buy that one? It doesn't seem to be available for me and the third party listing is aud ~$62 plus aud ~ $91 shipping.

    • I've noticed that ever since 'Amazon JP via AU' become a thing, many such items would no longer ship to Australia on the amazon.co.jp equivalent listing. Pretty annoying when I'm trying to do a bulk order to save on shipping.

    camel x3 states this is the standard price with no bargain.

    • The camels don't appear to have the requisite data of late. Everything shows up without reference. Find a better deal than this now before claiming no bargain, Minimum.

  • Totally different price ranges, but how does this Tojiro 150mm compare with say, the Takamura 150mm R2, or the petty knife you would typically find in a Global knife set?

      This is as good, or better than the Global. At least this doesn't have a sand-filled handle that is more prone to snapping.
      The Taka R2 is on a whole other level. R2 steel is incredibly hard and will hold a fine edge for longer than V10. It will also sharpen to a finer edge (with the right tools) and the blade is much thinner than either this Tojiro/Fujitora or Global GS knives. Is it worth $100-$150 more than a Mercer, Tojiro or Global? Up to the user.

    • The Global petty has a notch and curved so it's easier on board. This and the Takamura otoh are similar, short heel, slim handle, which mean almost no [middle] finger clearance, imo quite annoying for this length. I went wa handle with taller blade and never came back.

      edit: Steel means jack if ergonomic sucks…

      Better. You'll get more edge retention out of the VG10 of this knife, but you'll have to look after it more.

      Global steel is a bit on the softer side, so the edge wears out faster
