How about using the fat as subsitute for cooking oil. Many research say animal fat is better than cooking oil.
I don't think saturated fats are found to be healthy in research….

Yep i sear n render the fat off initially… and then remove them and cook them in their own fat.. most flavourful curries.. if its particularly large amounts of fat i save the oil in a jar for eggs in the morning.
Lamb fat is bloody delicious

Is this cut better than forequarter chops?
I like fore1/4 chops better as they're often juicier and have more flavour. They can be grilled/BBQ'd (not too long tho!), marinated and casseroled.
I also like Lamb Cutlets, (Also from the same/adjoining area as Loin Chops) especially crumbed.

I don't buy forequarter chops from Aldi, the hide the rubbish cuts under the nice cuts. Other supermarkets do this to a lesser degree.
As much as I'm happy to eat forequarters all day long, the loin chops are definitely better. (Hence them usually being a little dearer.)
Just think of these as lamb 'Homunculus' T bone steaks. They are delish.
The meat on this cut is more tender.

Costco lamb tends to be far better quality than COlesworth if you've got one near you.
Both are about 40-45 min unfortunately one way

Lamb forequarter chops at $12.50/kg these days is too good (was previously $16/kg)
All lamb chops are created equal.

Meanwhile farmers are getting around $4/kg for premium lambs

Transport costs more, so they just shot them.Guessing these should currently be selling around $8/kg.
Yeah they were getting $10-11 a year or so back for quite some time, but its been low for a while now, so its amusing to see it takes so long for the supermarkets to pass on those lower costs.
I'm not sure why farmers don't come together and just do the whole process themselves and make a killing
because the processes involved are expensive, heavily regulated and sensitive to market conditions and seasons. Things like Transport, Abattoirs, butchers etc are not inconsiderable costs and they all carry considerable risk which most farmers can't afford more of.
Some do have deep enough pockets to vertically integrate, but for the vast majority that is true.
The supply chain, especially in this country, is expensive both in regulation and actual $.
They could probably just talk to those industries and cut out Woolworths/Cole's altogether, I'm sure there's a way but I definitely don't have the complete solution and that's the issue, I guess there's no one willing enough to lead the other farmers and organise it. Rather sell off to Chinese investment instead which I can't fault them for, I'd do the exact same in that position but that's the problem, there's no leaders in Australia.
@lookingforadeal7: There have been plenty of CO-OP's that do parts of this in the past and present, it is not a silver bullet, in the end you have to be where the customers are which is in coles/woolies. But as mentioned it is basically stacking risk on top of risk, a bad season becomes magnified, plenty of those middle men that are raking in the money at the moment go bankrupt in a bad season, we have seen a lot of abattoirs, butchers and transport companies go under and in a bad season they all lose money.
@gromit: That makes sense, I suppose the marketing budget should be included. I'd drive an hour or more if it meant getting stuff for half price of what Cole's seems "half price". Obviously a huge operation so I can see why if one thing goes wrong they'd take a huge loss. But my guess is that farmers undercut each other for more business or corporations bought up farms and are able to undercut those farmers to have gotten to this point in the first place. I guess I just need to go looking for a cheap butcher around but every butcher I've entered in the past 6 months the prices are higher than Cole's or Woolies.

And that is reality, despite a lot of moaning and upset people there isn't a lot of fat in the prices, once you take away the benefits that coles and woolies get from scale (which is a nice profit margin) the local butcher can't compete on price, but they can compete on service and quality. Farm prices are dictated by contracts they sell to suppliers or the current market prices at saleyards (i.e. auction) or direct to Abattoir so farmers don't undercut each other, but they are beholden to the market which means if too much supply prices go down.

Uber farmer… which will actually be worse than Colesworth. But, with social media, cellar door sales could be a thing. Colesworth would probably drop them if they did. Reality..share holders.. profits are the goal..not helping farmers or consumers (regardless who the company is).
Foodland here in SA have meet prices often 50% less than Colesworth. Ie. Pork roasts are often $4.90/kg. Lamb at $8/kg is the norm. Whole scotch fillet $14/kg etc . If you are paying $40/kg at Colesworth… well
