Very nice but as thx mentioned these are prone to chip and ideal for more experienced users. Rockwell score of 61 so won't dull easily but due to how hard it is, it may chip if used incorrectly
How do these compare to other knives in this price range?
Looking for pressie to buy for brother for Xmas.
They're essentially about as good as you get before getting custom knives. As others state here, you do have to be careful with them. Also they're sharpened to ~15 degrees, most knives in stores tend to be ~20+ degrees. What this means is that it feels more like a razor going through your food, much easier to get super thin slices (if you have the skills) than more traditional (western) sharpening. As they're so finely sharpened, to maintain the edge they're also extremely hard metal, but that makes it brittle. So they'll hold their edge a good while, but get these near bones and do the wrong thing with them they could chip and take a small chunk out of your new knife.
As others state here, there's also free knife sharpening service by Shun Australia so you can maintain that awesome edge that they have. Look after these and you'll have a great knife for life.
I own two Shun knives now, they're so unbelievably sharp, I've accidentally cut myself once with them and didn't even notice initially. However cutting through anything is just so easy. For me they sped up meal prep & I can genuinely cut veg better (thinner/smaller) than my other kitchen knives with little effort. Only way to describe it, I had to be more careful to get an accurate cut with my more traditional German made, decent quality knives. But the old knives almost feel blunt in comparison.

Has anyone actually used Shun's sharpening service? I've usually sharpened mine but curious to use their service even if it takes a few weeks turn around.
Can't also confirm chipping, my small pairing knife lost the tip…..
I have not used the service yet, but I plan to use them in the new year.
I will try to document my experience with some macro photos to compare before and after.
