Although EJ has started expressing to suppliers a willingness to source cheaper ingredients for maximum profit rather than focus on quality food… Guess that's just capitalism?

@serpserpserp: They have definitely changed it in recent years already. Growing up right near the EJ in Blacktown, we were lucky to get their original Toum. It's 100% a lower quality product already, could be associated with supply and demand though.
Good Toum is hard to mass produce as it's a delicate process. It's something that a popular Lebo place in Greenacre and Al Tawouk in Lebanon struggle with also.
They get away with it because the general public doesn't really notice the difference.

I thought it was just 4 ingredients: garlic, oil, salt and lemon juice. Get the good quality oil and garlic and most of the way there. Good or bad Toum I'm still a fan.
@serpserpserp: Agreed, ingredients quality is important, hence why cost cutting is bad. But good toum is also to do with correctly breaking down ingredients before others are slowly added. Good toum is a delicate process.
A good cake and a bad cake can use the same ingredients.

I imagine it would be hard to mass produce the traditional recipe. Having said that it tastes pretty bloody good.

Depends on the restaurant, I have seen between 30% to a whopping 80% extra.
Huge markup for EJs. Works out a little cheaper to pick it up from the store once the discount is applied for a whole chicken meal for my local EJ.

For the entire duration of El Jannah being exclusive to uber eats, I never got it ONCE because the markup was insane. Now that its on doordash and menulog, theyve got a more competitive markup, and with the 10 off late night / 15 off 30, it now works out to be similar price to going in store. Pretty huge, and I haven't stopped ordering :(
