It's not enough.
Plex transcoding should work well with Intel quick sync.
Intel Quick Sync Video list of what can be enabled in Jellyfin Admin —> Playback —> Transcoding
anything with those codecs in the Alder Lake column should work well this transcoding review should answer your question much more throughlyif you run a slim os (debian, etc..), and use quicksync inside jellyfin it should be alright for a few users. I would say it wont hold up in gaming though

Yup.
Fire Stick or Google TV are a much better solution than a PC, especially for the olds.
