I currently have a Citi Rewards Platinum Card where the annual fees are waived.
What is the best credit card to pair up with my uBank Accounts for the most Rewards as an daily driver?
One that would allow me to transfer immediately would be great, and with minimal fees.
Travel, Purchase Protection, and the rest would be great.

My suggestion would be to use the HSBC Everyday Global debit card in-place of your usual rewards credit card.
You have to deposit $2k per month and deal with a mediocre app with no real time transaction notifications.
In return, you get 2% back for every tap-and-pay purchase under $100.

Comparable credit cards that have 2% or more return generally have hefty annual fees and silly minimum spending requirements that may push you to buy stuff you don't actually need.
You may still have to find a low/no fee credit card to complement the HSBC Everyday Global for online purchases, bill payments and in-person tap-and-pay transactions over $100.
My suggestion is CBA Smart Awards Credit Card. However, you will need to spend $2,000 a month to waive the monthly fee. It has international insurance and it has a promo - sign up and spend $1,500 per month to earn 20,000 CBA Award Points for the first four months. If you spend $4,000 per month then I would suggest a CBA Ultimate Awards credit card.
There are others but you need to do your homework and go read PDS.
Both my credit cards with price protection are now grandfathered, so can't help with that. Just to be clear though, don't complicate things by bringing uBank into it. There isn't a credit card that pairs better with that over another.
