    That's not a knife….. This is a knife!

  • The 180mm version of the tojiro is like 65 bucks too…..not sure if 180mm is too small for a gyuto though

    • BIg petty, small gyuto, depends

      • Ill just stick with my santokus i think lol.

Gyuto just seems too big for my hands

This one has more than a touch of Santoku is the nose shape, if that helps :-)

That's a good price. 180mm should be good for smaller chopping board and hands.

Different profile for different purposes. The tip of the gyuto allows delicate work and its belly makes rock chopping easier.

Good stuff. Buying a proper Japanese knife is one thing, learning how to properly sharpen them is another!

    • Any suggestions, thanks

Sharpening stone? I’m using King 1000 mainly. Good idea to get the guide to help find ideal angle too

Buy a chefs choice asian electric sharpener. Its flawless and will always be sharper than new

        • Wow, this thing costs more than the block of Global Knife i was planning to sharpen.

Shapton Pro 1000 is an often recommended whetstone.

    • Very true. I knew absolutely nothing about knives and stones a few months ago. Learnt heaps from r/chefknives and Burrfection.

  • I remember when there were global knives on Ozbargain once a week. The times they are a changin'.

  • F-xxx series is released to Japanese domestic market. FU-xxx is for the international market as far as I am aware
