Things to Make in Deep Fryer?

Picked up one of the Tefal Oleoclean deep fryers late last year and so far I've mostly been using it to make fried chicken and chips. Made mochi doughnuts last week though and now I'm on a roll to find some other things to try making with it. So far I've got cannoli and lechon kawali (fried pork belly) on the list but keen to hear what everyone else's favourite deep-fried dishes are?

Dabbled in loads of stuff but the all time favourite is schnitzel and thrice cooked chips

If you have a thick curry you can put strips of beef in flour with some seasoning and deep fry it, then throw the beef in the curry and service immediately. It’s delicious

    • +3

I did thrice cooked chips once then decided never again, just so much effort, time, and dishes to clean. Supermarket chips for me from now on. The 'Birds Eye Deli Frozen Chips with Golden Ale Beer Batter' are pretty damn good.

      • +1

Why supermarket chips and not fresh cut potato chips?

        • +1

You end up with a twice cooked chip. So you can fry at a higher temperature to get a crispy outer without having to cook them so long that they're overcooked, cook them at a lower temperature and you get soggy chips. Also convenience.

          • +1

@Cheaplikethebird: Agree that thrice-cooked is twice too much. I just peel & cut the potatoes into wedges. The store-bought processed chips taste wrong due to whatever they add as preservatives.

      • +2

Yeah they are a pest to make but I love the end result. Skin on chips!

If I'm using store bought chips my go to is just the regular crinkle cut

@Godric: A cake is sweet tho

Also, I'm laughing that 2 members wasted a precious neg on my 'potato scallops' comment. What is this world coming to?

@Godric: A cake is sweet tho

Honestly, that's a fair point i haven't heard before lol, but still no!

              • +5

@Godric: a potato cake is mash potato formed into a patty and then crumbed, a potato scallop is a potato that has been "scalloped"(cut into thin rounds) then battered and fried, checkmate you South Australian crazy person

                • @Qazxswec: I don't care what they are called anymore, i'm now craving what ever they're called

                • @Qazxswec: Thank you for clarifying!

                • @Qazxswec: so parochial - if you had a wider world view you'd acknowledge that local variations can allow so many different meanings to the same words that's it not worth calling out about it - unless you want to show up that you have a limited worldview ;-)

(says one who grew up eating your said potato scallops, but it's now many years since the only scallops I've eaten have been mostly raw on top of sushi nigiri)

      • A h the great debate, bane of first year linguistics students everywhere

i would suggest fish for fish nd chip but theres something about the use of unhealthy, probably quite old oil used by fish nd chip shop that makes it rather delectable (that and the use of thai/vietnamese fish farmed fish)

    • you getting the fish and chips from the wrong place,

though mine is made by a Vietnamese

      • basa

        • -1

Basa is meh. Good fish and chips is made from flathead or shark

          • @greatlamp: if I recall shark used to be called 'flake' in the fissionchip shops of my youth

I don't recall ever hearing anyone order shark and chips to go

basa I've had has generally been frozen and defrosted and is so soft it's more like a mush which I find kinda disgusting and not something I want to eat

            • @Hangryuman:

              fissionchip shops

I too enjoy eating radioactive chips.

            • @Hangryuman: Basa is mush by nature, doesn't matter if it isn't frozen, it's a freshwater fish. It's a bottom feeding catfish.

              • +1

@greatlamp: 'Basa is mush by nature, doesn't matter if it isn't frozen, it's a freshwater fish. It's a bottom feeding catfish.'

ah - that explains why I don't like it very mush …

    Hash browns

    • Hash browns with chicken salt

      • Where do we get real chicken salt in 2023?

        • I am happy with Aromat from Amazon

          • @Chiang: This one?
Knorr Aromat Seasoning, 1 kg https://amzn.asia/d/10aXLZg

            • @teacherer: Yeah. While it is not quite the slightly sweet chicken salt many want it is really good. Love it on chips and scallops but also on scrambled eggs, corn, baked spuds with butter. Add to sauces for that something extra in gravy or white sauces. That price is cheap btw. Original 1kg

          • @Chiang: Is that the pepper or the original one?

            • +1

@Yola: I buy Original. I think that is just a website error for 1kg.

    • With real hash that is legal overseas?

Make sure your cardiologist is on speed dial first.

    • Sounds like a shortcut method to fried chicken and waffle flavours. I'm into it but I'm topping mine with maple syrup.

    • recent find is thin sliced pork belly from Coles - designed for Asian hotpot - which when fried into crisp OMG is my transport to heaven

I would try it in my air fryer but milady has already cooked it in the frypan so I just bliss back …

my problem with deep fried food is that everything tastes of the oil - pretty much the same taste

Then make deep fried Picnic Bars!

      • +1

yeah, first time i had one the first ite was disgusting, but then i absolutely had to have more. a must have for me now when i see them on a menu.

I fry in my wok but I often do Hash Browns (Aldi do a cheap bag), Chicken Wings (Garlic mix from asian grocer), Curry Puffs and Spring rolls (I really like my curry chicken spring rolls). Salt and pepper calamari or flathead fillets in tempura go well when on sale at the markets.

Sometimes get chips going with a steak but usually bake some spuds. Beware Mr Greedy who tries to add more chips than the oil can safely take or who tips the bag so the ice goes in with the chips. Decant to a staino bowl first.

    Asparagus believe it or not.

Just add some salt and a little lemon juice and it tastes great.

🌽, corn, lightly oil-sprayed cauliflower chunks, pies etc.

    • +1

Why would you spray cauliflower with oil if you’re going to deep fry it in oil?

      • For crispiness-personal preference

      • +3

Pretty sure Bab is going with airfried rather than deep fried.

        • Makes sense

If you have a food wholesaler that is open to the public, that sells snack/International foods in bulk

    Tips
Avoid Seafood, or use a seperate Deep fryer.
Buy a Wifi switch, that is set to turn off after 9:00PM. Handy if you forget to turn it off at night (as I have done). :)

    • Thanks for the list! Don't worry fryer always gets turned off as soon as I pull the food out as I'm paranoid.

      • +1

We have a place in Newcastle called Bibina, that sell to cafes, restaurants as well as the public. Here is a link that may help.
        Metropolitan Foods?

    • any explanation on" avoid seafood"?

      • +2

Because it gets into everything, and ruins any future cooking unless properly cleaned. ;)

I forgot Dim Sims and Spring Rolls.

    double-crumbed wedges of camembert cheese

We have the Philips XXL with a grill attachment. The grill attachment is used most nights and does a great job for the fish, chops and anything else you would normally grill. We also do roasts in it nowadays. The pizza attachment makes great pizza and it is way cheaper on electricity. 6 mins and it's done. In the oven takes a lot more time plus the reheat.

Think beyond "frying". I have the baking attachment, but yet to get into baking with it yet. Will be when I can get it.

    • +2

I’m talking about real deep frying here.

      • +1

the type of frying where the oil courses through my veins. I fry wontons.

  • Steak

  • Tempura broccoli and cauliflower

  • no muricans describing their Thanksgiving turkey cook ?

AFAIK this is a relatively recent phenomenon there - an outdoor fire, a large drum filled with oil, and the whole turkey result described as juicy and delicious

not something I'm likely to be around - just sayin' …

    • What do you call recent?

      • The 1930's is pretty recent…..

The first time or remember seeing this was on King of the Hill and that episode aired in 2005. Considering Hank's love of tradition I didn't think it was new fangled then either. I always thought this method was pretty high risk based purely on how easily you could blow the whole thing up.

    • Yeah no I'm aware of it I just CBF storing all the equipment you need to do it properly. Would be interested to see how it tastes though.

  • It's a deep fryer. You can deep fry everything.
